
Hello everyone. How are you today? I hope all is well with you and your family. This year is another year with ripe mangoes are cheap. Especially in my district, the price of ripe mangoes is around 20-25 baht per kilogram. That's the price from local farmers. Although the price of ripe mangoes this year is higher than last year. But it is cheaper compared to other years. My wife and I can't go anywhere this month. We are still caring for our autistic son at home and we cannot take him outside. But I saw the ripe mango prices in the local district Facebook group. And I ordered ripe mangoes from local farmers on Facebook for delivered to my home. Besides eating ripe mangoes fresh, ripe mangoes can also be used to make desserts. One of them is sticky rice mixed with sweet coconut milk and ripe mango top with coconut cream. It's a dessert my wife likes to make when ripe mangoes are cheap.

pandan leaf

Ingredients

After soaking the sticky rice, cook sticky rice until cooked sticky rice.

Make sweet coconut milk for mixing with sticky rice. Add a little water to a pot, Then add palm sugar and pandan leaf to the pot. Then add the coconut milk to the pot and simmer until well mixed and turn off the heat. Then put the sticky rice in the pot and stir it with the sweet coconut milk.



Make the coconut cream topping, simmer the coconut milk with salt.

Finally serve sticky rice with sliced ripe mango and top with coconut cream.
