Filipinos love celebrating different occasions such as birthdays, fiestas, anniversaries, and other special events. During these gatherings, the food served is not always limited to pork dishes. Although pork is commonly included, other types of food such as chicken and fish are also prepared.
Fish is often served especially for guests who are senior citizens. Many older people tend to avoid eating pork for health reasons, so having fish on the table ensures that there is something suitable for them to enjoy during the celebration.

One of the most common ways of cooking fish is escabeche. This dish is prepared with a sweet-and-sour mixture and is usually cooked with carrots and ginger. Escabeche tastes even better when the carrots and ginger are only slightly cooked, so they remain a bit crisp.
Whenever my mother cooks escabeche, the carrots and ginger are always the first ones I eat because they are so flavorful. Typically, the fish is fried first, then cooked together with the sweet-and-sour mixture along with the other ingredients.

Another way of cooking fish is grilled fish with plenty of spices inside. Tiny slices of ginger, tomatoes, and onions are prepared and seasoned, then placed inside the fish before grilling. This is one of the favorite ways many Filipinos enjoy fish.
You can use different kinds of fish for this dish, but in our family we usually use bangus (milkfish) because we prefer it when it is grilled.

I don’t know what the usual ways of cooking fish are in your place. In our area, these are some of the common ways we prepare fish, and they are always eaten quickly because they are really delicious. Have you tried cooking fish this way?
