When is Summer gonna be over?
I can't help but ask everytime because it is soooo hot.
And I am sure that I am not the only one asking the same question.
However, the more that we ask, the more that it seems summer is here to stay.

So, how to BEAT THE HEAT?
1. GO FOR A NATURE HIKE TO THE RIVER.

2. ESCAPE TO THE SEAS.
We are quite lucky the beach is a 30-minutes drive from our house so we get to visit it almost every weekend.
Here's a hack: Go to the beach in the late afternoon. You wouldn't want to get a sunburn plus you are avoiding skin-related diseases brought about by direct sunlight.
We actually couldn't swim at day because it is too hot so we usually schedule our trip to the beach in the afternoons and we stay there until evening.
My husband bought a solar light that is charged during the day and we take it with us when we go to the beach so we have light when we swim at night.
3. INFLATABLE POOLS
If you can't go to a pool or beach or to the river, here's another way.
You can't dive in here but it is so refreshing soaking in the water during hot days.
4. DESSERTS.
Upgrade your ice creams. Here's one simple and easy way: Knicker Bocker. I did this several times and I'm craving more and more of it.
You just need a variety of tropical fruits: Watermelon and some other melons, Mangoes, Bananas, Strawberries. You can add more variety if you want. These are the fruits I use because there are a lot in the market.
Here's a tip I found on how to choose your watermelons:
How to prepare your knicker bocker
- Dice the fruits.
- For this version, I don't have strawberries so I used a strawberry flavored gelatin. I cooked it and I cut it afterwards. I also added a Buko Pandan-Flavored gelatin.
- I put the diced fruits and gelatin in a plate.
- Drizzle it with sweetened condensed milk.
- Top it with ice cream. For some, they use strawberry ice cream. For this version, I used strawberry ice cream and coco flan (combination of creamy coconut and leche flan).
- Lastly, sprinkle it with rice crispies.
📌Notes:
You can customize your own. Your knicker bocker shouldn't be limited to this. Don't be afraid to explore ways to make your knicker bocker enjoyable.
Here's another tip: put the fruits in the fridge before hand to make it colder.
And these are the ways we beat the heat.
