It is Saturday, and my family is planning to have an overnight stay at one of our local beaches. So I open the fridge and try to figure out what can be cooked and packed for our beach dinner tonight.
I have a pack of 350 grams of chicken liver, and in my pantry were a can of green peas and a can of button mushrooms. So I started to think of what could be done with these ingredients and came up with this recipe I will be sharing with you tonight.
RECIPE: QUICK STIR STIR-FRIED CHICKEN LIVER WITH PEAS AND BUTTONS
Cooking Time: 20 minutes
Serving: 4 to 5 pax
Ingredients:
350 grams of chicken liver
225 grams green peas (1 can)
225 grams of mushroom buttons (1 can)
6 cloves of garlic minced
1 medium-sized onion
a piece of ginger
a teaspoon of ground black pepper
a dash of salt and msg
a tablespoon of soy sauce
a tablespoon of cooking oil
1 medium-sized bell pepper
spring onions
1 pack of instant seasoning
Let's Cook! (The preparation)
Step 1: You might think I will heat the pan and sauté the spices first, but this time, it is not the first step.
Grab your teaspoon of ground black pepper and instant seasoning and generously coat the chicken liver with these ingredients.. I found out that pepper and the seasoning will lessen the metallic or iron-like smell of chicken liver.
Step 2: Yes! You're right! Let's heat the pan, put a tablespoon of cooking oil, and sauté the garlic and onions, followed by the ginger strips. I also found out that when sautéing and you will use ginger as one of the ingredients, it is much better if you include it in the sauté, as it will release its flavor and aroma.
Step 3: When the spices turned golden brown nicely over medium fire, you add the chicken liver and make a good stir. Wait for the chicken liver to be well done. Chicken liver cooks fast and easily.
Step 4: Add the drained green peas to the pan when the liver is already done. Make sure to drain away the water solution from your green peas. You can even wash the green peas if you like. Give a good stir.
Step 5: Follow immediately the mushroom buttons. I included the mushroom syrup as it will add flavor and aroma, instead of using plain water. Add the soy sauce and a dash of salt and msg. Continue to stir until the liquid is reduced and a bit thick.
Step 6: Add the spring onions and bell pepper when you have already arrived at your preferred thickness of the liquid. Turn off the fire after a minute. Your food is now ready to serve.
Fast and easy, no sweat, you will now dig into the most savory chicken liver you've ever tried.
