Whenever I come to some Hive based community discord, there is always a trade mark for South East Asian, which is all of us are Rice Eater. We eat rice as our main dish, and in Indonesia we often say that if you haven't eaten rice yet, you haven't got your lunch or dinner yet.
However I believe there are many foods here that not only in Indonesia, but all over South East Asia that are very popular and demanded, but not regarded as something important or interesting for other region. So In this post, I will try to share one of them, which this one is very popular and considered one of the best delicacy in Indonesia, but not in Africa, Europe and North America..
FISH HEAD
I dare myself to post this one here, because this community is for Asean Hivians or people who want to learn and know more about Asean culture. Fish heed is considered a a delicacy in many Southeast Asian countries. In some cuisines, the head is the most expensive part of the fish because of its tender meat, rich flavor, and gelatinous textures (like the cheeks and eyes).
Yes I know some people even want to puke when seeing this cuisine. It is understandable because in their countries, fish head is considered a leftover and packed only for their dogs and cats. However not in here, in Asean, Fish Head sometime becomes a luxurious dish.
The fish head I have today is not a local Indonesian dish. It is my own recipe, which blend it with some Easter Asian dish, which full of soy sauce and Japanese mirin.
The reason why I made this one with some mix recipe was because I want to eat the bone. It is not the fish bone, but more on the meat that attached to the bone.
What A 100% Local Flavor Taste Like
If this post gets a good respone, I will make a sequal one about a local taste fish head. In Indonesia, the most popular one is gulai kepala ikan (fish head curry) which comes from the western side and ikan bakar kepala (grilled fish head) which is a popular one from eastern side.
The eastern Indonesia like their fish head cooked without soup or more dried one. Later they will add some thick sauce to boost the flavor.
The western one like the fish head more watery, most of the cuisine are in curry soup, which has a strong coconut taste. There are some part that famous with their fish head soup, but they are actually adapted Chinese cuisine.
The funny thing is that most indonesians do not like the fishy taste and odor, so the fish head fishy flavor are covered wth some coconut and chili pepper paste, with many extra spices.
