You would like to think that if the chef/cook has a special then he knows how to do this well and it should be very good and not just ok or nothing special. If he had done a good pizza that everyone liked then you would have generated a ton of new business for him with your pet Nadi for a slice campaign.
he needs to go back to the soups he was doing before. They ALWAYS sold out very quickly. I'll never understand businesses that sell out of something and then just move on to something else like that never happened. The same is true of certain drinks at minimarts... when they have them they sell out immediately and then they won't have them again for 6 months. There has to be a better way.
Stick to what you know and what sells as the answer is right there in front of you.
