Hello guys! How are you all? It' me again, Cathy, hope you are doing well. After a week of stormy weather I finally able to write again. In my country here in Philippines rain or shine we still have to work. And thanks God that the weather now is fine.
Today I will be sharing a local dish. You know guys, that in cooking, we can also express our love for someone we cherish or for our beloved family. Because through cooking, we can also express our love for them. As they say, right? In cooking to make it delicious, add with love that's why we want that when we serve it to them, they won't just be full but also happy! (As they say, full and happy!) Isn't it such a great feeling? Your cooking was so fulfilling, not only did you become happy, but the people you served were even happier than you. Especially my little one. So guys, always remember this in cooking it doesn't matter if the ingredients you used are incomplete or if they are expensive or cheap, what matters is that you cooked it with love.
That's why I thought I'd share with you this String beans with coconut milk(ginataang sitaw) with a bit of pork that I cooked.
Simple but yet I really liked my dish, it's my first time cooking this. I've tasted this from others and it was delicious. So I tried cooking it in my own way.
Here are the ingredients I used.
- onion (1 whole large, minced)
- garlic (just 4 pieces, minced)
- ginger (minced)
- string beans
- pork
- cooking oil, salt, ground pepper (you guys can estimate how much to put in. It's up to your taste, of course!)
- 2 freshly squeeze coconut milk.
If you like pork, you can put more, I am preparing this for myself and my kids so I prefer a healthy way so I just put in less than half a kilo of pork.
Coconut milk here in my country can be bought raw, and the vendor will grate the coconut and squeeze the juice in it. So I bought 2 PCs of coconut. It's pure by the way and fresh.
There are two ways to cook it; the first is that you can stir-fry it, and the second is that you can also boil it directly.
I used the second one to avoid the oil. So I'll put the meat, onions, garlic, and ginger together with the coconut milk. I just let it simmer. Then I added the string beans right from the first boil because the meat was already tender. I've already seasoned it with pepper and salt. And I just let it simmer for about 8 minutes. Then it's okay. A delicious dinner for me and my two children.
We Filipinos are used to rice and side dishes, unlike Western countries where most people don't eat rice, but not everyone is like that. After a busy day at work, I still managed to prepare a healthy meal for my children somehow. We had a hearty meal, simple yet delicious. We finished it at one go.
My youngest is very excited because she likes vegetables. Not everyday I can cooked for them, I do have some shifts that I come home late to cook for us, so take away food is the only choice. But I try to cook whenever I have time. And those take aways are expensive haha. It's hard being a mother and the same time working full time but it's very rewarding. All the hard work and sacrifice are worth it when I see my kids are happy and healthy.
