Hello everyone!!
It's the weekend again, and I hope we all have a great and joyful weekend.
Today is my daughter's best friend's birthday, and we always love to celebrate with her despite the distance since she is in the US now with her family. My daughter and I have already mentioned her in some of our blogs here, how precious this lady is to us. She's not just a friend to us but a real family member. I honestly love the affection that we have and how sweet it is when she calls me mom and my hubby dad, and most especially, she dearly loves my daughter and treats her as her real sister.
So today, my daughter @tegoshei and I decided to make a "Yummylicious Mango Pudding" on her birthday because she loves sweets. My husband assisted in opening the canned milk, too, so he can also contribute to making this pudding because he knows this is for our far-away daughter's birthday.
So, without further ado, let's take a look at how we did it.
Yummylicious Mango Pudding...😋🥭💖

INGREDIENTS:
- 3pcs Ripe Mangoes
- 2 cans Evaporated Milk
- 1 can Condensed Milk (I used mango flavor)
- 1 packet All-Purpose Creamer
- 3 tbsp Cornstarch
- 1 sachet Unflavored Gulaman or Gelatin
- A few drops of Honey or Vanilla Extract (optional)
PREPARATION/COOKING:

Wash and cut the mangoes, and slice them into cubes. Then mash some of them to make a mango puree, and then put them in a separate bowl. And set aside.
In a pot or cooker, pour in 2 cans of evaporated milk. You can also use fresh milk.




Then, add the 3 tbsp of cornstarch. Stir to dilute the cornstarch. Then add the gulaman powder and continue stirring.

After that, pour in the creamer and the condensed milk. Mix them well.

This one is optional, but we also added a bit of honey into the mixture. You can also add vanilla extract instead.
Then put the cooker on low to medium heat. And constantly stir the mixture and let it simmer until the mixture thickens.


Then add the mango puree, mix until well combined.

While I was cooking the pudding mixture, my daughter put some mango cubes into the molders for toppings.




And now I'm done cooking the mixtures, it has a beautiful texture already. As soon as it is cooked, transfer it directly into the molders.

Let them cool down for a few minutes at room temperature before putting them into the fridge.

After a few hours in the fridge, take them out of the mold and transfer them to a plate by flipping it.

And there it is!! So beautiful and really yummy!! Just a bit sad because the celebrant is so far away from us. But as the saying goes, it's the thought that counts. And we truly love her!!
