I was not feeling well for the past few days and that's why I wasn't able to post something here. But thanks to God Almighty, I am feeling well now.
It was a gloomy day today, so I decided to cook a dish with soup for my family. And I want to share it with you all, too. It's my own version of "Tinolang Manok" or Chicken Stew or Soup".
This dish is one of the traditional Filipino comfort foods that usually consists of chicken, broth ( I used Knorr chicken broth cube)green leafy vegetables, and papaya... but today I am having sayote or chayote instead of papaya.
And with these two main spices that will make the soup more savory... the ginger and lemon grass. I added potatoes for my ingredients today because my daughter @tegoshei really loves potato. But this is only optional.
I hope you will like it... So let's start cooking now..
INGREDIENTS:
- Chicken
- Chayote
- Potato
- Bok Choy
- Ginger
- Lemon Grass
- Onion
- Unripe Tomatoes
- Knorr Chicken Broth Cube
- Ground Black Pepper
- Salt
- Water
- Spring Onion
PREPARATION:
Gather all the ingredients.
Wash the cut chicken thoroughly. Strain to dry and set aside.
Wash and peel the chayote, potato and onion and then wash again after peeling.
Wash the bok choy, lemon grass, tomatoes and spring onions thoroughly.
Then cut the chayote, potatoes, tomatoes, onion, ginger, spring onion and bok choy. Then set aside.
COOKING TIME:
On a casserole pot, I heated some water until it boils. Then, I put the ginger and lemon grass. Let it boil continuously until their unique smell or aroma come out.
Then add the chicken. Cover it for a while and then add the chicken broth cube. Cover again and continue boiling it until chicken becomes a bit tender. Then add the head part of spring onion and tomatoes.
And then I removed the lemon grass to balance the taste and aroma.
Continue to boil and then season with salt and ground black pepper.
Add the potatoes and and chayote. Cover again until the chicken and vegetables are cooked.
Put the final ingredients, the bok choy and spring onion leaves. Cover again until the bok choy becomes bit wilted.
And then it's done and ready to serve.
