Today, I want to share the dish I cooked using the chicken stock from my crispy fried chicken ala Max's, which I posted the other day. We still have some veggies at home, so I decided just to add some pork (lean meat) and stir-fry them.
So, let's take a look at how I did it.
Pork and Veggie Stir Fry with Homemade Chicken Stock
INGREDIENTS:
- Pork
- Potato
- Carrot
- Chayote
- Cabbage
- Onion
- Garlic
- Bell Pepper
- Spring Onion
- Chicken Stock
- Soy Sauce
- Knorr Liquid Seasoning
- Ground Black Pepper
- Magic Sarap Seasoning
- Salt
- Canola Oil
- Water
PREPARATION:

Rub some salt on the pork, then slightly massage the pork with the salt for a few seconds, and then wash the pork thoroughly. Rinse well and then cut the pork into small pieces or according to your desired size and shape.
Wash and peel the chayote, and then cut it.
Wash and peel the carrot, then cut it.
Wash and peel the potato, and then cut it.
Wash the cabbage well, then cut it into smaller pieces.
Peel and wash the onion, and then cut it.
Crush and just peel the crushed garlic.
Wash and then cut the bell pepper and remove the seeds, then cut into small cubes.
Wash and cut the spring onion.
Set all the prepared ingredients aside, and let's start cooking.
COOKING TIME:

Heat a little canola oil in a pan, then stir-fry the pork until it becomes brownish.


Set the pork to the sides and then sauté onions and garlic until aromatic. Then add the white spring onion and sauté them all together.
Then add 1 cup of water and 1/2 cup of chicken stock. Cover the pan and let it simmer until the meat is tender and the sauce has evaporated. Then that's the time you add the veggies.

First, sauté the chayote and carrot with the pork for just 1 minute, then add the potatoes and bell pepper. Sauté them for a few seconds and then add some chicken stock again and a little water if needed.
Then add just a little soy sauce, just a pinch of Magic Sarap, and Knorr liquid seasoning to taste.

Then cover the pan again and continue cooking until the veggies and pork are cooked. Then add the cabbage and the green spring onion. Stir and mix them until well combined. Continue cooking until the cabbage is a bit wilted.




And there it is... all done and ready to serve with some brown rice.
