Let's have some "Chicken Sarciado with Air Fried Potatoes".
In Filipino cuisine, "sarciado” refers to a dish that is prepared with a tomato-based sauce (a bit thicker sauce).
I prepared this type of dish for our lunch today, using chicken meat. And to make this dish more satisfying and appetizing, I added some air-fried potatoes to it.
So kindly come and let's take a look at how I prepared and cooked it.
Chicken Sarciado with Air Fried Potatoes

INGREDIENTS:

- Chicken
- Potatoes
- Onions
- Garlic
- Ginger
- Bell Pepper
- Tomato Paste
- Tomato Catsup
- Green Peas
- Flour
- Soy Sauce
- Salt
- Sugar
- Lemon
- Chicken Cube
- Ground Pepper
- Butter
- Canola Oil
- Water
PREPARATION:

Wash the chicken cuts thoroughly, strain and drain, and then set aside.
Wash and peel potatoes, and then cut them into your desired size and shape.
Peel and wash onions, then cut into small pieces.
Peel and crush the garlic, and then cut it into small pieces.
Wash the bell pepper, cut it, and remove the seeds. Then, cut it into strips.
Wash and peel the ginger, and then cut it into strips.
Set all the prepared ingredients aside.
COOKING TIME:
I pre-cooked the potato first.

Heat the pan and then melt 1 tbsp of butter. Once the butter is melted, add 1 tbsp of all-purpose flour. Stir them until the flour dissolves. Then add 1/2 cup of water, 3 tbsp of tomato catsup, ground pepper, and salt to taste.

Let it simmer for a few minutes and then add the potatoes. Stir and mix the potatoes with the sauce until they are all evenly coated. Just half-cook the potato. Remove from the stove and let it cool down.
While cooling down the potatoes, let's start cooking the chicken.

Heat some canola oil in another pan and then slightly sauté the bell pepper for a few seconds, and then remove and transfer it to a plate, and set aside.

Then, sauté the onions, garlic, and ginger together until aromatic.

Then add the chicken and sauté with the aromatics. Then, wait until the juice from the chicken itself evaporates.

Then add 1 tbsp of tomato paste and one piece of chicken cube. Mix them with chicken and aromatics.
I already made a sauce a while ago, so after mixing the tomato and chicken cube, let's add the sauce.

This is a mixture of water, tomato catsup, a little squeeze of lemon juice, soy sauce, a pinch of salt, and a little sugar to balance the flavor.
After adding the sauce, let it simmer and continue to cook until the chicken becomes tender and cooked, and the sauce thickens.

Then add the green peas and the bell pepper. Cook for two minutes and then turn off the stove, and there it is. Let's leave it for a while, and we'll continue cooking the potato in an air fryer.

I arranged the pre-cooked potatoes in a silicone mold and air-fried them for about 16 minutes.
The dish is ready for plating and to be served.
