Buko Pandan Salad (A refreshing Filipino dessert)

Today, let's make one of the famous Filipino's refreshing desserts, "buko pandan salad".
This salad is best for any regular day, anytime you wish to have it, and is ideal for all special occasions.
So, let's take a look at how I did it.

Buko Pandan Salad




INGREDIENTS:

  • Fresh Shredded Coconut Fruit
  • Fresh Coconut Juice
  • Condensed Milk (Pandan Flavor)
  • Evaporated Milk
  • Soy Milk
  • Creamer
  • Pandan Flavored Gelatin
  • Cheese
  • Nata de Coco
  • Water
  • Vanilla Extract (optional)


PREPARATION AND COOKING:



Gather all the ingredients on the table.

I already have shredded coconut fresh from the coconut stall where my husband bought earlier.


Grate some cheese and cut some of the cheese into cubes.

Strain the juice from nata de coco and set aside.

We only have less preparation here on the table. Just open all the dairy cans and pouches needed to get it ready for mixing later.

So now, we will proceed with making the pandan jelly.

Pour in the sachet of jelly powder, then add 5 cups of water. Mix them well until the jelly dissolves. Some people will add sugar when making the jelly, but I chose not to add sugar to avoid excessive sweetness.

After mixing the jelly well, let's turn on the stove to medium heat. Continue stirring the mixture until it boils. Once boiling, remove from the heat and transfer to a mold and set until it becomes firm.

Let's now cook the shredded coconut fruit/meat. Heat the pan, then add the coconut fruit and coconut juice. Cook it until it softens a bit, and then turn off the heat.

Now let's mix the creamy ingredients.

In a bigger container of your choice, pour in the evaporated milk, chilled creamer, soya milk, and pandan-flavored condensed milk, and then mix them well.

Then add some grated cheese.

Our jelly is already firm and cooled down, so let's cut or slice it into cubes.

Add the pandan jelly into the mixture, and then the buko fruit. Mix them well, then add the nata de coco. Then add some cheese cubes, and then mix them again.

We placed it in the chiller for a few hours...

And there it is... our refreshing, creamy buko pandan salad.

We also shared some with our neighbors. It's really yummy!! 😋
