I was in two minds about participating in this week's challenge of ASEAN Hive Community, which is about "Chef Challenge: Tofu" because I've posted some of my tofu recipes here already.
But then, I also thought why not? Since there are still a lot of different ways to cook tofu, and besides, my family likes to eat tofu, so we often have it as a replacement for meat. It was good timing because I was craving for togue or mung bean sprout, and this veggie is also a good combination for tofu. So, I decided to cook "Air Fried Tofu in Stir Fried Veggies". Cooking in an air fryer is healthier than pan frying with cooking oil, so this was how I cooked this dish.
Air Fried Tofu in Stir Fried Veggies
INGREDIENTS:
- Tofu
- Mung Bean Sprout
- Carrot
- Baguio Beans
- Onion
- Garlic
- Tomato
- Bell Pepper
- Soy Sauce
- Salt
- Ground Black Pepper
- Magic Sarap Seasoning
- Brown Sugar
- Canola oil
- Water
PREPARATION:
Pat dry the tofu with a kitchen towel. Then, slice them into cubes and marinate the tofu with soy sauce, a little brown sugar, ground black pepper, and a pinch of magic sarap. Then, set aside.
Wash the mung bean sprout using a strainer, then drain the water.
Wash and peel the carrot and then cut into thin strips.
Wash the Baguio beans, remove the hard part on both sides, then slice thinly.
Wash and peel the onion, then slice it into small pieces.
Crush and peel garlic and then slice or cut into small pieces.
Wash the tomato and slice it into small pieces.
Wash the bell pepper and then cut it thinly.
Set all the ingredients aside, and we'll start cooking.
COOKING TIME:
Cook the marinated tofu in the air fryer until all are finished, and then set aside.
Now, let's prepare the pan or cooker.
Heat some canola oil and then sauté garlic, onion, and tomato until fragrant.
Then add the carrot and Baguio beans and sauté them together with the aromatics for just about one minute or two. Then add the bell pepper. Season with soy sauce, ground black pepper, and magic sarap. Continue sautéing them all together for a few more minutes.
After a few minutes, add the mung bean sprout. Stir to combine all the ingredients. Then, add water and a pinch of salt to taste. Let it simmer for just a few minutes, and make sure not to overcook the veggies.
Then, add the air-fried tofu until the sauce is reduced.
And so, we’re done and ready to serve while it's hot. It's a yummy and healthy dish.
