The bulbs are dried and now moving onto curing

Around three weeks ago, I harvested a small amount of garlic I was growing in some raised garden beds. I bought a "garlic starter kit" which included a few bulbs from different garlic varieties. Amazing to see each bulb and to think a single garlic clove made that. I am really impressed they came out so good. And looking forward to starting our commercial garlic operation in a few months after seeing this harvest.

I just cut off most of the stems from these bulbs, left them on from the point of harvest up to about three weeks ago. But they have dried now, so was time to cut them. I should have probably used scissors to cut them, but I found they broke off quite easy. Seems they have dried quite a bit. As when I harvested them, I yanked them out of the ground by twisting up the stem and they were really strong. But now they break right off with very little force.

The first week with these fresh bulbs in the basement they produced a strong garlic aroma. But now I can hardly smell them at all. So I think they have dried quite well in this basement. The tempatures in there stay around 70F so that should be perfect, it is also quite dry so the bulbs should be able to cure without risk of mildew forming.

Now its time to cure them, meaning you just leave them for even longer and their flavors really start forming strongly in the bulbs. The longer the better.. up to 6 weeks to cure them fully.

Hopefully the bulbs did not mind me cleaning them up a bit. I wanted to do this as soon as I harvested them, but from the research I did said not to. So I left them alone. But now with them dried I think its a good time to remove the leaves, stems and dirty outer skin. All of this debris would be good to till back into the soil.

We have already cooked with a few bulbs, using them to make garlic butter. And it tasted great. So I guess I can use these as soon as they are out of the ground, but the longer we wait the better the flavor will be.

So now I wait until around autumn to really enjoy them, and then I am guessing they can stay good for a long time on shelves in the right conditions. A couple will go into the ground to start next years garlic beds.

It was really easy growing these bulbs, so I recommend it if you have never tried it. And now we have enough to plant more in a few months. So once you buy a kit, your set to always have new starter bulbs for the following season.

This is how garlic is stored in southern Europe. In Sicily, you will rarely pass a house without a garlic braid hanging above the front door. This protects against evil spirits!
Cooked garlic for flavoured butter? That's completely new to me. Crushed raw with a pinch of sea salt to create an oily paste, then mixed with butter (ideally with a little chilli and fresh, aromatic herbs). I also always keep a bottle of olive oil with lots of garlic cloves in it, which release their aroma into the oil. Perfect for salad dressings or simply drizzled over tomatoes or fresh baguette.

Oh interesting, yeah I have seen those before.. makes sense they braid them like that.

I may end up doing that when I grow much more..

Hah yeah that is how we make garlic bread.. We add crushed up garlic to butter, which infuses the flavor and then put it on bread.

That sounds good too with oil.. butter is nice too though.

The garlic looks great. The smell is a bit unpleasant, but it's quite healthy. How did you get the garlic seeds?

Ah thanks.. I plant the cloves.. the individual pieces from the bulb. It never goes to flower as I cut the scapes before then.

Great job! I love garlic especially the stuff I've grown in my own yard. That should last you quite a while. The only problem I've run into with garlic is it can really take over parts of the yard. It's an aggressive grower!

can you please explain me : do I need to get the garden bed like yours , then hang individual cloves on it or simply get and leave the longer stem with the hairs and little bulk below and wait about 3 weeks under a closed area like a garage for them to fully grow ? thanks

yeah that sounds about right, make sure your garage humidity does not get too high.

I am really happy with how they came out.

The reason to not remove skins is to help them store longer. What variety did you like best?

Ah I just took off the first layer covered in dirt.. hopefully that was not too much.

The kit I got comes with:

1 bulb of Elephant Garlic (conventional)
3 bulbs of California Late White (softneck)
3 bulbs of Music (hardneck)
3 bulbs of Russian Red (hardneck)
3 sets of French Red Shallots (organic)

Honestly I have not tried them all yet.. and not sure I can tell the difference.

Looking forward to trying the music garlic the most, as that is what we are going to be growing on a large scale.

Many people love Music, but I've never grown it. Up until 2 years ago the German Extra hardy did well here so I never changed.

Love me some garlic! If you are looking for ways to keep them longer, you can try pickling them. It is popular here in Viet Nam, and the pickled garlic pairs very well with many dishes.

Excellent garlic.
We usually weave it into a wreath or just stack it on top of each other on a string and dry it that way. And it turns out that it can last a long time.
