I’ve been a little out of the loop due to personal matters, and after hearing the news about the earthquakes in Venezuela, I feel less inclined to write—even though I’ve been away from my country for several years, I always keep an eye on what’s happening there. A few days ago, I read that a Hiver—whom I don’t know personally, but who’s always active, especially posting recipes, lost her home because of the earthquakes. So I thought my way of helping her would be through this post. Whenever she can, she comments on my posts with great warmth and respect, and today I want to tell her that I’m sending her a big hug from here and remind her that she’s not alone—just like the rest of the Venezuelan people. I’m so sorry for what happened, and I hope with all my heart that she can rebuild her home as soon as possible. He estado un poco alejada por temas personales y luego de las noticias sobre los terremotos en
Venezuela tengo menos ganas de escribir, aunque llevo varios años fuera de mi país siempre estoy pendiente de lo que pasa.
Hace unos días leí que una Hiver a quien no conozco personalmente, pero siempre está activa publicando, sobre todo recetas, perdió su hogar debido a los terremotos.
Así que pensé que mi manera de ayudarla es a través de este post.
Ella cada vez que puede comenta con mucho cariño y respeto mis publicaciones y hoy quiero decirle que desde acá le mando un abrazo fuerte y le recuerdo que no está sola, al igual que el resto de venezolanos.
Siento mucho lo que pasó y espero de todo corazón que pueda recuperar de nuevo su casa lo antes posible.

Ingredients:

60 g butter
1.25 cups self-rising flour (1 cup plus 1/4)
1/2 cup sugar
1 egg
1 carrot (grated)
100 g white chocolate
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

For decoration:

100 g more white chocolate

Ingredientes:

Preparation:

Start by melting the butter, then let it cool just a little (it shouldn’t be solid) and add it to a bowl with the sugar. Begin mixing.

Now add the grated carrot; before incorporating it into the rest of the ingredients, try to remove as much liquid as possible—you can use a strainer and press it until it’s as dry as possible, or use a kitchen towel or press it with clean hands.

Scoop up a little dough with a spoon and fill it with a small piece of white chocolate, then seal it so the chocolate doesn’t leak out when they’re in the oven.

Repeat this step for all the cookies, then place them on a baking sheet and bake for about 20 minutes at 180 C° or until golden brown.
