we can eat fresh eggplants in other dishes when they are blended well with other veggies, but here they are baked. The fresh first photo is before baking;)

Sorry, after that comment, I remembered that we also make a dish in which baked eggplant is used after mashing it a little. And that tastes so good so I am sure your salad will be great too. ;P
