Healthier Chili Oil Noodles 😋 - TacoCat (kinda) Cooks! #66

Hey Hive!

Sorry for the hiatus but we're back with more of our home cooking! If you're unfamiliar with this series, it's where I showcase some new recipes I've been trying at home since I've been cooking a lot nowadays! Both because it's cheaper and also healthier to cook for yourself compared to eating out. While I have some regular recipes I do like to try new things and figured I'd share the new ones I've tried.

This recipe is actually related to the previous post I did, where I shared these Chinese chili oil noodles we bought in China.

It literally translates to red chili oil sour spicy flavoured noodles. Last time I cooked it it was actually really nice, but the portion was way too small. So I decided to add some ingredients this time with some extra noodles as well.

Here are the contents of each pack, which comes with the noodles, chili oil pack and seasoning.

Here are the ingredients I used:

  • 2 packs of Chinese chili oil hot and sour noodles
  • 1 cup frozen broccoli
  • 1 carrot
  • 500g lean pork
  • salt
  • pepper
  • vegetable oil
  • 150g knife cut noodles
  • 200g bok choy
  • 100g garlic
  • 150g enoki mushroom

There was a deal for frozen lean pork slices from Porkee and I've never tried cooking this before so I thought it'd be nice to try.

Step 1: Defrost the pork.

Step 2: Once defrosted, season the pork with salt and pepper.

Step 3: Heat up some oil in a work and stir fry the garlic until aromatic, then add in the pork and stir fry until the meat changes colour.

Stir fry the pork for a few minutes until slightly browned.

Step 4: Rinse and slice the vegetables and mushrooms.

Step 5: Add the vegetables to a pot of boiling water and let it boil until soft or al dente.

Step 6: Add the noodles to the pot and let it boil.

Boil the noodles until soft.

Step 7: Drain the pot then add the noodles back to the wok.

Step 8: Stir fry the noodles with the pork, then add the seasoning and the chili oil.

Once the sauce and seasoning is well combined with the meat and noodles, it's ready to serve!

It looked and smelled really good, I was so excited to dig in! Last time I cooked this there was too much noodles and not enough sauce so I was excited to try this again now that it was more balanced.

It was so delicious! The noodles were nice and soft and slightly chewy, while the pork was tender and the vegetables and mushrooms soaked up the sauce too. Initially I thought the pork would be bland since I didn't add much seasoning to it other than salt and pepper but thankfully there was enough sauce for it.

I actually like this kind of noodles a lot, and if you want to make this dish it's actually pretty easy if you have chili oil and you can pair it with different kind of noodles like pasta. Overall this was a very much improved version of this packet of noodles. We enjoyed it a lot and Sean finished his plate in under 10 minutes!
