
I finally got to the supermarket to restock the fridge with fresh veggies for my Keto meals. It had been storming so much that I won't drive when the roads are so bad. But alas, the sun came out and the roads were clear enough that I ventured out.
I got fresh broccoli, radish, onions, celery, carrots, avocado's, spring mix lettuce, cottage cheese, apples, cheese curds, sardines, oysters, salmon, cream for yogurt, and odds and ends. The store was so busy that I had to stand in line for 15 minutes after shopping up and down the isles trying to find everything. They had rearranged the entire store, and everybody was complaining they couldn't find something.

I made a salad for lunch after putting away all the groceries and that was enough for me, and I had to rest until it was time to make dinner.

I was too tired to make a big meal and decided to make a simple tofu soup with chicken broth and some chopped up Kimchi. It only took less than 15 minutes to make, and it was very satisfying.

While my husband went to an appointment the following morning, I spent some time prepping him some breakfast meals for the freezer. He just pops them into the toaster to warm them up whenever he wants them.

Since I already had all the ingredients out, I decided to make some pancakes for him too. This week I will make him some French toast, and he will have another choice.
The only thing left to make for his breakfasts will be the vegetable and egg casserole that he likes. That should keep him satisfied for the month, I hope.

Then when I went to put all the goodies in the freezer, I realized he had already gone through most of the stuffed tortilla's I had made him for lunch with the crimpit. I can see that that will have to be another day soon as well.
