
Another week has come to an end, and I dropped another pound by following a Keto-style menu. Intermittent fasting also helps to burn fat, and now that I am being diligent for the most part, I'm starting to drop a few more ounces each day. It is exciting to see what the scale says every morning.
I made a large salad with celery, carrots, onions, radish, and cheese curds. Then I poached a piece of wild-caught salmon and added that to the salad. Vinergret dressing was just right with the salmon.
Alfredo Pasta:
Hubby asked for pasta for dinner, so I decided to make alfredo that night for him.

Sautéing onions, peppers, sun-dried tomatoes, and broccoli until translucent. Add in half a block of cream cheese along with cream and Romano cheese, and simmer.

I found a package of mock crab in the freezer, so I decided to add that to the recipe.


At Christmas, a neighbor gifted me a package of specialty pasta, and that was perfect for the dish.

I had a small dish of pasta with a small salad, while my husband had a very large plate full. I'm sure I was way past my carbohydrate limit for the day, but at least I got to enjoy the same dinner with hubby.

It's hard for him when I don't have the same meal as he does; he thinks it's too much work for me to do different recipes. Now, I've started making larger portions so that I can serve leftovers and still stick to the keto diet.
