Every so often I get obsessed with making sweet things in the microwave. The saving grace is that I only make one tiny cake at a time 😁
Making sweet desserts and 'chocolate cake in a mug' in the microwave always ends up in disaster for me, followed by an hour's worth of scrubbing and cleaning up the remnants of the chocolatey explosion!

That rubbery texture you're talking about could be the fat/oil you use (look forward to the experiments) but could be if the mixture is overworked or left too long before going in the oven once the liquids have been added to the dry ingredients.
Yes, I had to learn how to do it without getting mix all over the microwave - all that cleaning and no sweet treat.
I haven't made bread for a long time, I have an aversion to putting the oven on unless it's full, and while I still have work to do on the house, I haven't replaced the freezer so I don't have somewhere to store the excess loaves until I'm ready to eat them. I do miss homemade bread, though, even though I'm able to get good sourdough rye and seeded loaves locally.
I'm pleased to say it's cooler here at the moment, and some rain. Not much fun for people on holiday, but much easier to get jobs done.
