Rajasthani Kadhi Khichdi
Rajasthan is famous for its culture as well as its food. Kadhi-Khichdi is not only tasty and healthy but also beneficial for the digestive system because it is light for the body. Khichdi is also a very good option for small children, sick people and elderly people because it is easily digested. Whenever you think of eating light food, then Kadhi-Khichdi is made. It can be made both in lunch and dinner. Khichdi is made for different occasions and occasions throughout India. Its ratio is 1:1.
Ingredients of Kadhi:-
Curd - 1.5 cups
Gram flour - 1/4 cup
Water - 4 cups
Paste of green chilli, garlic and ginger
Turmeric - 1/4 tsp
Salt - 1 tsp
Kasuri methi - 1 tsp
Cloves- 5-6
Fenugreek seeds- 1 tsp
Some curry leaves
Whole red chillies- 4-5
Water- 4 cups
Method:-
First of all, put curd in a vessel
Add water as per requirement and churn it
This makes buttermilk from curd, then add gram flour to it and churn it well We will beat it
Make a thin batter. Now put it on the gas to heat it. Keep stirring it till it boils. At the same time, mix all the ingredients
( Mix salt, turmeric, ginger, green chillies, garlic paste, fenugreek seeds, kasuri methi, whole red chillies, cloves, curry leaves,
So that their flavour gets into the curry and keep stirring it, slowly the curry starts becoming thick, let it cook for 30 minutes, keep stirring it in between, now turn off the gas and put it in another pan and filter it through a sieve
For tempering For :-
- Ghee - 1 tsp
- Mustard - 1 tsp
- Cumin seeds - 1 tsp
- Asafoetida - 1/4 tsp
- Red chilli powder - 1 tsp
Method :- Firstly, heat ghee in a small pan
Now, add mustard seeds, cumin seeds, asafoetida
and then add red chilli powder
Put the seasoning in the Kadhi
Cover it so that the flavour of the seasoning remains in the Kadhi, keep it closed for some time, then add finely chopped coriander
Finally serve hot will serve with khichdi
Khichdi :-
Peeled Moong Dal and Rice Khichdi :-
Ingredients :-
- Peeled Moong Dal - 1 cup
- Rice - 1 cup
- Ghee - 1 table spoon
- Cumin seeds - 1 teaspoon
- Asafoetida - 1/2 teaspoon
- Salt - 1 teaspoon
- Turmeric - 1 teaspoon
- Water - 7 cups
Method :-
First of all, soak the lentils and rice in water for 1/2 hour

Then wash the lentils and rice thoroughly with clean water 3-4 times
Now turn on the gas and put 1 spoon of ghee in the cooker
Heat it and add asafoetida and cumin seeds to it
Add lentils, rice and then add water
Add salt and turmeric to it
Mix it well
And close the lid of the cooker
After 1 whistle, turn off the gas and leave the cooker to cool down on its own, then check whether the khichdi is ready
While serving the khichdi, add more ghee and eat and serve with hot curry
