Khandvi
Khandvi is a traditional Gujarati dish. Gujarati food is famous all over the country. Less spices and chillies are used in Gujarati dishes. This is the reason why Gujarati dishes are liked by children as well as adults. Khandvi is made very soft and is made as a snack. It has very low calorie content because it is made in very little oil.
Ingredients:-
- Gram flour- 1 cup
- Sour beaten curd- 1 cup
- Water- 1 cup
- Green chilli and ginger paste- 1 tsp
- Turmeric- 1/2 tsp
- Salt- 1/2 tsp
For tempering:-
- Oil- 1 table spoon
- Mustard- 1 tsp
- Sesame seeds- 1 tsp
- Asafoetida- 1/4 tsp
- Curry leaves- 10-15
- Coriander leaves - finely chopped
- Fresh coconut - 1 table spoon grated
Method: -
Firstly, take one cup gram flour in a bowl
Add one cup sour whipped curd in it
(if the curd is not sour then you can also add 2 tsp lemon juice)
Then add 2 cups of water from the same cup and measure it.
Mix it well and now add ginger and garlic paste
Then turmeric
And salt
Put it in the mixture and mix it well again so that there are no lumps in the mixture. Now a very smooth mixture is ready.
Now take a pan, put a sieve in it and filter the mixture so that while eating Khandvi, no piece of chilli or ginger comes in the mouth and there are no lumps in the mixture.
Cook on medium flame while continuously stirring with a ladle
For 5 minutes or until it thickens
Then reduce the flame to low and cook for 10 minutes. Cook for another minute while stirring continuously
To check if the batter is ready or not, pour a little on a plate and see if it comes out easily, then the batter is ready
Now turn the plate upside down and spread this mixture on it
This mixture will make about 4 plates
Now keep the plates aside for 10 minutes so that the mixture cools down and solidifies
Now with the help of a knife, cut them into 2 inch wide and 6 inch long strips
Then roll them in a circular motion and make them into rolls
In this way we will prepare all the rolls
And arrange them in a tray
Now let's prepare the tadka for it
For Tadka:-
Heat one tablespoon oil in a pan, add mustard seeds, asafoetida, sesame seeds and let them crackle
Then add curry leaves
Turn off the gas
Now apply this seasoning on all sides of the Khandvi roll with a spoon
And garnish it with coriander leaves and fresh coconut
