It contains many properties like vitamins, minerals and fiber. Bitter gourd vegetable is prepared in many ways, but if you prepare and eat cashew bitter gourd vegetable once, then it will really be your favorite vegetable.
Ingredients: -
Bitter gourd - 250 grams
Salt - 1 tsp
Lemon - 2
Cashew - 1/2 cup
Oil - for frying
Cumin - 1 tsp
Asafoetida- 1/4 tsp
Sesame seeds- 2 tsp
Dry coconut- 2 tsp
Red chilli powder- 1.5 tsp
11 Turmeric 1/2 tsp
Coriander powder- 2 tsp
Jaggery- 1 tsp
Garam masala- 1 tsp
Method :- Firstly, cut the bitter gourd
from front and back and peel it gently.
Cut it into pieces
If bitter gourd has thick seeds then remove them
Now add 1 teaspoon salt
And add juice of 1 lemon
Mix it well and leave it for 30 minutes (you can also add vinegar instead of lemon) Then squeeze the bitter gourd to remove all its bitter water and wash it 3-4 times with plain water
And squeeze out all the water from the bitter gourd
Heat oil in a pan
Put 1/2 cup cashews in it
Fry After that, take it out
After that, add bitter gourd and fry it for 3-4 minutes.
Now, add cumin seeds, asafoetida, sesame seeds and dry coconut powder in the remaining oil and fry it well.
Then add all the dry spices (red chili powder, turmeric powder, coriander powder, garam masala) and cook
Then add bitter gourd
and cashew nuts
Add it and mix it well
Cover it and let it cook on low flame for 2-3 minutes
Now add 1 spoon of jaggery and mix it
And turn off the gas and add the juice of 1 lemon at last and mix it well
Cashew bitter gourd vegetable will be ready
This vegetable It will last for 3-4 days as it does not contain water. This is a pure Jain dish.
