Hi, I just added two eggs, salt and pepper, and 1/2 cup of Parmesan cheese to the shredded zucchini. Then I stir in just enough flour to make it like a pancake mix. Fry them with a little oil. So fast and simple to make.
Thanks. I do have a similar recipe I got from a friend years ago but my patties never turn out nice and round and brown like yours. I'll have to experiment a bit! We do like them with applesauce on top!
P.S. I made those this evening, and just paid a bit more attention to shaping them in the pan. They looked nicer, and were soooo tasty!I had to make a second batch, because we ate so many.
