Hoy quiero enseñarles mi desayuno de domingo, y créanme: es bien sencillo, súper fácil de hacer y queda delicioso. Así que aquí les traigo la receta de mis panqueques esponjosos (sin complicaciones ni ingredientes raros). ¡Vamos al lío!

Today I want to show you my Sunday breakfast, and believe me: it's very simple, super easy to make, and delicious. So here I bring you the recipe for my fluffy pancakes (no complications or weird ingredients). Let's get to it

Lo primero: los ingredientes.
En mi caso usé dos huevos porque eran bien pequeños, pero si tienes uno grande, puedes usar solo uno. También vamos a necesitar harina, azúcar… y para diluir la mezcla, yo usé leche condensada, pero puedes usar leche normal, agua… ¡hasta yogurt he usado! Todo vale para lograr la textura que queremos. Esto solo es por si la mezcla queda muy espesa

First: the ingredients.
In my case, I used two eggs because they were very small, but if you have one large egg, you can use just one. We'll also need flour, sugar… and to thin out the mixture, I used sweetened condensed milk, but you can use regular milk, water… I've even used yogurt! Anything goes to achieve the texture we want. This is only in case the mixture turns out too thick.

Preparación base:
En un plato, pon los dos huevos con dos cucharadas grandes de azúcar. Con un tenedor, revuelve hasta que espume. Tiene que verse como en la foto que les dejo. Cuando ya esté espumoso, agrega tres cucharadas de harina y mezcla bien, sin dejar grumos. Remueve, remueve y remueve hasta que quede una mezcla bien cremosa (como en la imagen).

Base preparation:
In a plate, put the two eggs with two large tablespoons of sugar. With a fork, stir until it becomes frothy. It should look like in the photo I'm leaving for you. When it's frothy, add three tablespoons of flour and mix well, leaving no lumps. Stir, stir, and stir until you get a very creamy mixture (like in the picture).

Ajuste de textura:
Si ves que te quedó muy aguada, añade más harina de a poquito hasta lograr la consistencia deseada. Si te quedó muy espesa, aflójala con un poco de leche, agua… o en mi caso, diluyo un poco de leche condensada con agua. Al usar leche condensada, ya le estoy dando sabor a la masa, pero también puedes darle un toque con vainilla o canela, según tus gustos.

Texture adjustment:
If you see that the mixture is too runny, add a little more flour little by little until you achieve the desired consistency. If it's too thick, loosen it with a bit of milk, water… or in my case, I dilute a little sweetened condensed milk with water. By using condensed milk, I'm already adding flavor to the batter, but you can also give it a touch of vanilla or cinnamon, depending on your taste.


Cocción (paso clave):
En un sartén antiadherente (importantísimo para que no se peguen), embárralo con un poquito de aceite y pon una porción de la mezcla. Yo lo hice circular, pero tú dale la forma que prefieras. Cuando empieces a ver burbujitas en la superficie… ¡esa es la señal! Ahí puedes voltearlo. Lo dejas un minuto o menos, y ya está listo. Así repetimos hasta que se acabe la mezcla.

Cooking (key step):
In a non-stick pan (very important so they don't stick), grease it with a little bit of oil and pour in a portion of the mixture. I made mine circular, but you can shape it however you like. When you start to see little bubbles on the surface… that's the sign! That's when you can flip it. Let it cook for a minute or less, and it's ready. Then just repeat until the mixture runs out.


Resultado final:
Este es el resultado: unos panqueques que pueden salir más o menos, dependiendo del tamaño que les des. A mí me salieron 7 panqueques, perfectos para una persona… aunque yo los estuve compartiendo con mi mamá 🥰. Para terminar, les eché un poco más de leche condensada por arriba, pero puedes hacerlo con miel, sirope de fresa o acompañarlos con lo que más te guste.

Final result:
This is the result: pancakes that may turn out more or less depending on the size you make them. I ended up with 7 pancakes, perfect for one person… although I was sharing them with my mom 🥰. To finish, I poured a little more sweetened condensed milk on top, but you can do it with honey, strawberry syrup, or serve them with whatever you like best.
