Let's make delicious pancakes suitable for tea time.

There’s something truly comforting about enjoying a warm, soft pancake during tea time. But when it’s crafted with a uniquely Sri Lankan touch—using pandan leaf juice, caramelized coconut, and a simple wheat flour base—it becomes something far more than just a quick snack.

The gentle aroma and natural green hue from the pandan juice added to the pancake batter give it a fresh and inviting appeal. The rich, sweet filling made from caramelized sugar and grated coconut adds a perfectly balanced texture and flavor.

Ingredients...

🌺 Wheat flour 200g.
🌺 Two or three pandan leaves.
🌺 A pinch of salt.
🌺 2/3 Cup of sugar.
🌺 2 Cup of coconut milk.
🌺 Some hot water.
🌺 Egg yolk.

The cooking process as follows.

First, add a few pandan leaves into a blender, pour in a little water, and blend until it becomes a juice.

Next, add some wheat flour into a bowl, along with a pinch of salt, a little egg yolk, and some pandan juice. Gradually add water while mixing to make a slightly thick batter.

Next, to prepare the sweet filling, place a pan on the stove and add some sugar. Once it begins to caramelize, add a little hot water and then the remaining sugar, allowing it to caramelize fully.

Next, add the grated coconut and mix thoroughly. Let it cook for about 3 minutes while stirring, then take it off the stove.

Now, take another pan and place it over medium heat. Once the pan is well heated, pour a ladleful of the prepared pandan batter onto it and gently spread it into a neat round pancake shape.

Now take a portion of the prepared sweet coconut mixture and place it as a light filling on the pancake as shown below.
