Hi culinary friends, how are you? I hope you're all well and enjoying delicious dishes at home. Of course, home-cooked dishes are much healthier than those bought outside, right? Well, today I'm going to invite you to cook free-range chicken. Coincidentally, my house is having a Maulid celebration, which we commemorate every year as the birthday of the Prophet Muhammad. To celebrate the Prophet Muhammad's birthday, we usually cook a variety of dishes such as chicken, beef, shrimp, crab, vegetable soup, and many other dishes.
And this time I chose to cook free-range chicken. I cooked the chicken in a red sauce with a little broth, and added coconut milk to make it even more savory.
I bought this free-range chicken at a farm specializing in free-range chickens in the village where I live. Because it's the Maulid season, most free-range chicken sellers will raise the price a little higher, which is their custom. But that's okay because free-range chickens are much healthier than other types of chickens, in my opinion. Free-range chickens are different from other farmed chickens.

For the chicken, I bought it at the market already cut up because I was too lazy to cut it up when I got home.
Materials used
1/2 gram red chili
10 red onion cloves
3 cloves of garlic
1 stalk lemongrass
A pinch of turmeric
1/2 coconut
2 tbsp roasted coconut
Manufacturing procedure
First I grind all the spices, after they are smooth I pour them into the chicken, I also add roasted coconut to the chicken

I then grated the coconut and blended it to get the coconut milk.
Next, I sautéed bay leaves, lemongrass, nutmeg, cinnamon, and star anise, sautéed them until they wilted.

After it's cooked, I also add 1 ladle of finely ground chilies and stir-fry until cooked, then I add the chicken that has been coated with the spices, and I also add coconut milk.

Next, I cook until the chicken is tender and the sauce has reduced. Don't forget to add salt and adjust the taste.

RESULTS
and here is the result of my red broth free-range chicken, ready to be served, eaten with warm rice makes it so delicious, the chicken meat is also soft, the brush tastes a little spicy but the delicious savory taste of the coconut milk is really felt

The sauce is very thick, because I cooked it really hard until the sauce reduced a lot because there was coconut milk, that's why the sauce thickened like this. So, if you have free-range chicken at home, try cooking it like this, I'm sure you'll like it.
