Hello awesome people of Foodies Bee Hive! Welcome to my blog! It’s me again, your Hiver @ronimarie82 from the Philippines. It has been exactly one week since the last time I published my last blog. Thing’s got busy and it seem’s my body asked for a rest so I made my one week rest and recharged myself. Now ,it’s time to share again my blog here on Foodies Bee Hive. For today’s blog let me share with you all my another Pinoy recipe. This dish is the best in the Philippines especially during special occasions. Like birthday's, christening’s, fiesta’s, anniversaries, or any other Filipino occasions. This dish is surely on the table and loved among us Filipinos.

This dish is called Menudo ( pork meat stew) and is cooked with carrots,potatoes and species. Menudo is also mixed with liver or liverspread but for my recipe I would use fresh liver because for me, It is more tasty compared to the processed one. I am making a twist in my menudo recipe because when I went to SM Supermarket they did not have beef liver, only pork liver. To complete my ingredients I bought pork liver. So now let us go to the kitchen and find out if the outcome of beef meat and pork liver would taste good. By the way, this is my first time to cook menudo using beef meat and pork liver.
“ PORK AND BEEF MENUDO”
Ingredients:
500 grams Beef meat 500 grams Pork Liver 2 pcs medium Potatoes 2 pcs of Carrots 1 medium Bell pepper Half box Cheese 1 pack Hotdog 1 pouch Green peas Half cup Soy sauce ½ cup tomato paste Oil to saute 2 pcs small Onions 4 pcs cloves Garlic ⅛ teaspoon ground Black pepper 4 leaves Bay leaf 1 cup Water 1 tablespoon brown sugar 2 pcs lemon or kalamansi
Procedure: *Remove the skin of the garlic and onion then wash it together with the Bell pepper. *Mince the Garlic and cut into small cubes the onions.
- Remove the seeds of the Bell pepper and cut it into cubes.
- Open the pouch of the Green peas and then remove the water using a strainer.
*Wash well the beef meat *Slice and cut into big cubes.
In a pot add water and ground pepper then bring it to boil.
When the water boils, add the beef meat and simmer it for five to seven minutes.
Remove the pot from fire and throw away the water because it has the impurities of the meat.
Wash the meat again then set aside.
Wash the liver then add water in a pot.
Bring to boil then repeat the process of the beef meat. *Cut into smaller cubes the beef and the liver.
Add the beef to a mixing bowl or any container.
Add the soy sauce.
- ground pepper.
- Add kalamansi and garlic, mix it well then marinate it for one hour. *Remove the skin of the Carrots and Potatoes, wash it well.
- Cut into small cubes the Carrots and the Potatoes.
- In a pan, add oil to the pan fry the carrots together with the potatoes.
*Remove the carrots and potatoes set aside.
*Pan fry the bell pepper then remove from the pan and add it to the carrots and potatoes
*Last to pan fry is the liver.
PREPARE TO SAUTE
*In a pan where we pan fry, add the onions and the garlic, wait until it golden brown.
*Add the beef, mix it then let it simmer for a while then add the marinade.
*Add one cup of water and tomato paste them mix.
*Add the bay leaf and the sugar.
- Transfer to a cooking pot so it can be covered well.
*Cover and simmer it until beef is tender. *Remove the skin of the hotdog, wash it and then sliced.
- Add the green peas to the carrots or to the vegetables. *When the beef is tender , add the carrots and tomatoes,green peas, liver and the bell pepper.
*Mix it well then add the hotdogs.
*Add the grated Cheese.
*Lastly add my secret in every dish, My Magic Sarap seasoning.
Mix it well and simmer it until the hotdog is cooked . *Taste it, you can add more sugar or soy sauce according to your taste.
Removed from fire then served.
Up to 10 servings
Now we can enjoy our cheesy Pork and Beef Menudo and we Filipinos love to eat always with rice. A meal is not a breakfast, lunch or dinner if we do not have a rice pair to our dish.. Before I forgot; I found out that pork liver is much better to cook because its smell is not that strong compared to beef liver. If you are starved and want meat with cheesy and saucy? Menudo is the best.
