The culinary traditions of the holiday season are exquisite, but they are short-lived. I need a magic wand to extend them for two more months. If I had to choose one, without a doubt, it would be ham bread, a delicacy that delights my palate at this time of year, so I wanted to recreate these festivities in a symbolic way and I made a special order.
Every time I read or hear the word "December" my taste buds jump with happiness, I must confess that I understand them perfectly 😅. In this month we give ourselves the freedom to eat extra, because the variety of delicacies that are at our fingertips at the family table we do not find at other times of the year.
I love the sweet touch characteristic of this type of bread -some bakers achieve it with papelón-. I consider it ideal because in each bite there is balance and harmony. The smoked ham is one of my favorites, its particular flavor gives a certain humidity to the dough, which is why the consistency is different and unique.
On the other hand, the bacon fat also provides moisture and intensifies the smoky flavor. In addition, the other two essential ingredients are olives and raisins, typical of the preparations of these dates, I enjoy this feast of flavors in my mouth, an excellent combination.
Finally, we have a crispy layer that contrasts with the soft dough inside. When the light bulbs shine, it shines like a mirror, which is due to the egg whites, sprayed with a varnish.

El jamón ahumado es de mis favoritos, su sabor particular le da cierta humedad a la masa, de allí que la consistencia sea diferente y única.
Por otro lado, la grasa de la tocineta también concede humedad e intensifica el sabor ahumado. Además, los otros dos ingredientes esenciales son las aceitunas y las pasas, propios de las preparaciones de estas fechas, disfruto esta fiesta de sabores en mi boca, una excelente combinación.
Por último, tenemos una capa crujiente que contrasta con la masa suave de adentro. Cuando la luz de los bombillos brilla, resplandece como un espejo, lo cual se debe a las claras de huevos, rociadas con un barniz.
