A few days ago, I went to Nankana Sahib for some work. After finishing the work, I started my journey back to Lahore, but I received a notification that the Nankana Sahib to Lahore motorway was closed due to maintenance work. So, I continued my return journey via an alternate route, the GT Road (Grand Trunk Road, one of Asia’s oldest and longest major highways).
That small detour turned out to be a delightful experience. After leaving Nankana Sahib city, on the Faisalabad Lahore highway, I stopped at a small seasonal roadside stall where Gurr (Jaggery, گڑ) was being prepared and sold.

Gurr is a traditional unrefined sugar that has been a staple in Punjab for centuries. The aroma and sweetness of freshly made Gurr immediately took me back to the rustic charm of my village, where my grandfather used to grow sugarcane, wheat, rice, potatoes, corn, and many other crops in our fields.


I captured photos of the complete preparation process of Gurr, made using the old traditional method, to share with you all.
Gurr is made from sugarcane juice, and the traditional method in Punjab is as fascinating as the taste itself. Farmers first harvest fresh sugarcane


and press it in small, locally made machines to extract the juice.
Sugar Cane Juice is also used as a traditional drink and very popular in Punjab.




The juice is then boiled in large open pans over a slow fire.

Farmers usually use bagasse, dried sugarcane leaves, and sometimes dried cow dung as fuel.


During boiling, the juice is continuously stirred and skimmed to remove impurities. Baking soda is used for this purpose, although somepeople prefer not to use it.

Once the juice reaches the right consistency, it is poured into molds to cool, where it solidifies into large blocks of Gurr. These blocks are later cut into smaller pieces. The result is a naturally sweet, caramel-colored sugar that retains rich minerals and nutrients absent in refined sugar.


It's than shaped into small pieces.

At the stall, I tasted it warm and slightly sticky. It was not just sugar, it was the taste of Punjabs heritage, connecting me to centuries old tradition in a single bite. History, culture, and tradition wrapped into a sweet little piece of Gurr.
Sometimes, the small and simple stops during a journey leave the sweet deepest memories and refresh your old good memories. The taste of Gurr, the warmth of the roadside vendor, and the rustic charm of Punjab all came together in a fleeting yet unforgettable experience.
