Traditional Cake To Commemorate 30 Days Of Death Kue Boh Usen

This classic dish is made from a combination of grated coconut and rice flour, which is a popular traditional cake in my area.




Boh Usen Cake


Boh usen is a popular name for this cake, boh husen itself is a name that comes from our local language, Aceh. The name of this cake is inspired by the name of a tree called usen, which has a fruit shaped like a crescent moon, so this cake is made in the shape of a crescent moon.

The history of this cake is not only about the name, but has cultural values that are still attached to it today. The diversity of traditions in every moment makes this cake often made during certain events. Such as holiday celebrations or celebrating the death of your father for 30 days. This cake became a mandatory cake as a complement to other cakes that I made as "rampoe cake" to take home to guests who came to visit.

Now because of this, my mother and I are quite enthusiastic about preparing this cake at home. We prepared it together because this cake requires special precision and patience, after all I was making it for the first time so my mother helped prepare the recipe.




Ingredients

Main Ingredients


2 coconuts
1 bag rice flour
2 eggs
2.5 cups sugar
Salt to taste
1 spoon butter

Coating ingredients


70 grams glutinous rice flour
150 grams rice flour
Water to taste
¼ teaspoon salt




Making Procedure


I roast the flour first then cool it until it is completely cold

Then prepare the grated coconut and add sugar and salt. Then I cook with sugar until the sugar dissolves and until it dries, when cooking add a little water.

After the coconut is cooked, let it cool to room temperature, well make sure it is really cold so that it is easy to stir.

Add 2 eggs into the cooled flour then add the grated coconut.

Stir everything until evenly mixed, when stirred it is a bit sticky, so make sure the coconut is dry earlier when cooked. Then add margarine and stir until finished.

The dough is good, I flatten it on the mat then I cut it with a glass.

This is the mold that my mother usually uses, because the event must be rather large I print it with a glass. But I also printed with a snow princess cake mold yesterday for a smaller size. look at the different results, right?.

If all the dough is ready it's time to fry, I stir all the lubricant ingredients then dip the cake into the wet dough.

Then fry until a little yellow, don't let it get too brown.

Look at the result, it is very beautiful, after cooking this cake, it is more enjoyable to enjoy but cold is no problem, it is also very delicious. This cake is crispy outside and sweet inside the texture inside is so soft with a very perfect blend of ingredients. The coconut is very savory, but I think it's too sweet for my taste, I have to reduce the sugar a little tomorrow. My mom said because it's made for guests so we shouldn't overdo the sugar portion.

I'm so happy that I can make this traditional cake at home, we usually tempah this cake with our neighbors here. But this time I'm really determined to make it myself, I'm sure Dad is very happy if I do this.
