Super-creamy Dragon Fruit Ice Cream

Ice cream has always been a treat that appeals to everyone; I think it’s not just for kids—ice cream is a fantastic treat that anyone can enjoy. Well, this time, unlike before, I made some super-creamy ice cream that’s sure to attract a lot of people.




Dragon Fruit Ice Cream

Dragon fruit is known for its beautiful color, no matter what dish it’s used in. Just like the sponge cake I made yesterday—it turned out perfectly and really caught the eye with its striking color contrast. The same goes for making ice cream: without any artificial coloring, simply using the dragon fruit pulp creates a simple ice cream with a truly perfect flavor.

This ice cream may look ordinary, but the process is different from my usual method—I used SP, a vegetable emulsifier that makes the ice cream much creamier. SP is often used as a softener and leavening agent in cakes. However, I believe using it to make ice cream will work well. I’m not using it without reason—I’ve seen countless posts on social media of people making ice cream with this ingredient. Of course, be sure to use fresh, active SP for the best results.

Here’s a step-by-step guide to making simple dragon fruit ice cream.




Ingredients

300 grams dragon fruit
¼ teaspoon SP (melted)
2 tablespoons cornstarch
2 tablespoons sweetened condensed milk
3 tablespoons granulated sugar
200 ml water (can be substituted with milk)




Instructions


Combine granulated sugar and sweetened condensed milk in a saucepan, then set aside.

Mash the dragon fruit flesh with a spoon until smooth, then add it to the saucepan containing the sugar and milk.

Next, add water, then stir in the cornstarch until well combined.

Cook until thickened, then pour into a mold. Let it cool, then place it in the freezer and let it freeze for 6 hours.

After 6 hours, remove the frozen dragon fruit by scraping it into a bowl. Next, steam it briefly to ensure it’s fully cooked.

Blend all the ingredients with just a little water to make mixing easier, until the texture becomes smooth.

Then spoon it into cups or any ice cream containers you like. Return it to the freezer until frozen.

Ta-da! The final result of this ice cream is absolutely perfect—just as I expected. It’s incredibly smooth and beautiful. Who would have thought that ice cream, which is usually just ordinary and a bit grainy without whipped cream, could be this incredibly smooth?.

I’m so happy that my first attempt at making super-smooth dragon fruit ice cream was a success—and it’s definitely delicious. Everyone loved it, including me—I really love how it melts in your mouth, and of course, the sweetness is just right and incredibly tasty.
