Stir-Fried Corn Rice Vermicelli with Homemade Mentai Sauce

Mentai style rice vermicelli is a simple yet incredibly delicious dish—it’s the perfect substitute when I’m craving hearty menta-style food.




Corn rice vermicelli is an ingredient I always have on hand at home. I tend to stock up on it because whenever I feel like eating instant noodles, I always end up reaching for rice vermicelli instead. Yeah, rice vermicelli is way better than instant noodles and can be used in all sorts of creative dishes. From sweet and savory to spicy dishes. This time, I’m trying to make something different with rice vermicelli. Baked rice vermicelli—it sounds pretty interesting, and it can definitely be turned into a variety of upscale dishes.




Mentai Rice Vermicelli

Mentai rice vermicelli is a dish made by topping rice vermicelli with menthai sauce. However, for a budget-friendly version, we’ll make the menthai sauce using a simple recipe with ingredients you always have on hand. What makes this dish unique is that the rice noodles are stir-fried with simple seasonings and mixed with minced chicken, which definitely adds umami and savory flavor. Plus, the chicken makes the dish feel more satisfying when enjoyed.




Ingredients

1 pack of rice noodles
Fried chicken breast, as needed
3 tablespoons mayonnaise
2 tablespoons chili sauce
2 tablespoons seaweed
1 clove shallot
1 clove garlic
2 bird’s eye chilies
Salt, to taste




Instructions


Finely chop the shallot and chilies, then stir-fry them in a little cooking oil until wilted.

Next, add the rice vermicelli that has been soaked in hot water, then stir and fry.

Add the seaweed and chopped chicken breast as toppings, then cook until done.

Let it cook through, then add salt—don’t forget to adjust the seasoning. Once cooked, set it aside in a heat-resistant container.

Next, prepare the menthai sauce by mixing mayonnaise and chili sauce, then stir and pour it over the rice noodles.

Top with chopped seaweed, then bake in the oven on the top heat setting for about 20 minutes at 250 degrees, or adjust according to your oven. Make sure everything is cooked evenly, and it’s ready to serve.

Serve up this simple version of my mentai rice noodles—I guarantee you’ll love it. It’s very simple to make and definitely delicious. The combination of savory, spicy, and sweet flavors from the sauce ingredients is something I think you can easily find. Yeah, I always use those two sauces as a menthai sauce hack. The authentic version is a bit expensive here and hard to find, except at online stores.

The texture is fantastic—the chewy noodles pair perfectly with the incredibly tasty chicken breast, enhanced by the natural savory-sweet flavors of all the ingredients. I love the spicy, savory, and slightly sweet-and-sour taste from the mayo—it’s absolutely delicious. And of course, the distinctive aroma from the caramelized sauce at the end of the cooking process makes this dish even more delicious.
