Shredded Tuna with Tauco and Quail Eggs

Skipjack tuna is my absolute favorite fish; no matter how it’s cooked, it’s always delicious and has a unique flavor profile. I’m so happy to be making this dish again—while I made fish floss last time, today I’m trying something different. I intentionally grilled an extra piece of this fish yesterday specifically to make this tauco dish.




Skipjack Tuna and Quail Egg Tauco

Skipjack tuna and quail egg tauco is a type of tauco dish made by fermenting soybeans and then combining them with skipjack tuna and quail eggs. This combination is a favorite of everyone at home because it’s just that delicious. Tauco is indeed a favorite ingredient frequently used in various Indonesian dishes. Ingredients

1 grilled skipjack tuna
11 quail eggs
15 green chilies
1 tomato
2 tablespoons of tauco
2 cloves of garlic
2 shallots




Preparation Instructions


Prepare all the ingredients: cut the tomatoes, slice the chili peppers, and finely chop the shallots and garlic.

Sauté the shallots and garlic in a little oil, then add the sliced chili peppers and tomatoes.

Cook until everything is wilted, then add the tauco and cook until the flavors are fully absorbed.

Add the grilled skipjack tuna, which has been shredded, then add the quail eggs, stir, and cook. Adjust the seasoning; if it’s still bland, you can add a little salt, but don’t add it at the beginning because the tauco is already very salty.

Serve the tauco skipjack with quail eggs alongside warm rice—I guarantee you’ll want to have seconds. Just the appearance alone is very appetizing; all the flavors come together in a savory, salty, and spicy blend, making this dish incredibly umami.
