Hi everyone, of course you will see many new dishes on this blog. This time, I will invite you to prepare one of the simple cookies that will make you curious. These cookies are quite popular in my area, but there are many variations for the filling. This time, I made them following the original recipe for this dish.




Klepon cookies


Klepon cookies are cookies made from a mixture of green pandan flour. However, these cookies mimic the original green, round klepon recipe with a coconut layer on the outside and melted palm sugar filling inside. Klepon is a traditional Indonesian snack. I've made klepon before, but it was a different type made from sweet potatoes, not the original recipe. I'll share the original pandan klepon recipe with you another time.

Inspired by the original klepon, these cookies were created, though they didn’t quite meet my expectations. All my cookies melted, releasing their filling, but there was a small part that didn’t melt. That was enough to make me happy, even though I was a bit disappointed by the melted palm sugar. It was a failure, but I’ll still share it with you because it’s delicious.




Ingredients

175 grams of wheat flour
30 grams of caster sugar
175 grams of margarine
1 tablespoon of powdered milk
1 tablespoon of cornstarch
1 egg
Dried grated coconut, to taste
Palm sugar, to taste, for filling
1 teaspoon of pandan paste




Procedure


Mix all the dry ingredients together, then add the powdered milk.

Mix and stir in 1 egg yolk, add the margarine, then stir until evenly mixed.

Once the dough is mixed, don't forget to add green food coloring or pandan paste until the color is beautiful.

Then divide the dough or roll it into balls according to the size you want.

Then add finely chopped palm sugar, ensuring the dough is tightly sealed so the filling doesn't leak out.

Roll in dried grated coconut, arrange in a baking pan.

Bake for approximately 60 minutes at 185 degrees Celsius or adjust according to your oven.

My klepon cookies are done, even though the sugar melted, but I'm quite satisfied that some of them didn't crack and crumble. Maybe this was a mistake when preparing the dough or the texture of the liquid sugar. So I don't recommend adding palm sugar filling. It's better to use jam, chocolate, or coconut that has been cooked with palm sugar so it doesn't melt like this.

The taste is quite savory, sweet from the sugar, and has a distinct aroma of palm sugar and pandan. The texture of the cookies is very soft and fragrant; I really like these cookies. The layer of dried coconut makes them look very attractive.
