Crispy Cornflake Cookies with Palm Sugar

This isn’t the first time I’ve made cornflake cookies; I’ve made crispy cornflake cookies with raisins before. They’re just as delicious, but these cookies are different from the previous ones—they taste even better with that mouthwatering topping.

These cookies are incredibly easy to make, and the super-premium toppings make them the most popular treat in my house. Cookies are often served as treats during Eid. That’s why, as Eid approaches, people bake a lot of cookies. This is the first recipe I’ve tried, and I made them well in advance of Eid but only now have the chance to share the recipe.

It doesn’t take long—cookies like these are really easy to make. Just roll out the dough, shape it into rounds, and add the prepared toppings, and you’ll end up with some amazing cookies. Curious about the process? Let’s take a look at the preparation steps below.




Ingredients

50 grams grated cheese
50 grams corn flakes
50 grams palm sugar

Dough Ingredients

150 grams butter
50 grams sugar
1 egg yolk
¼ teaspoon vanilla extract
25 grams powdered milk
A pinch of salt
225 grams all-purpose flour
¼ teaspoon baking powder




Preparation Procedure


Crush the corn flakes until completely crushed, then add the palm sugar. Mix all three ingredients until well combined.

Prepare the dough by mixing the butter and sugar, then beat until well combined and the color changes. Next, add the egg yolk.

Beat again, add a pinch of salt, then add the powdered milk and mix until well combined.

Add the all-purpose flour—be sure to sift it to ensure a smooth dough—and knead until it forms a dough.

Then scoop the dough with a measuring spoon and press it into the cornflake-cheese mixture prepared in the first step. Press the dough into the mixture so the cornflakes, palm sugar, and cheese stick to the cookies.

Finally, bake in an oven set to 180 degrees Celsius (top and bottom heat), or adjust according to your oven.

Once the cookies have cooled to room temperature and are fully baked and dry, drizzle melted chocolate over them.

These cornflake, palm sugar, and cheese cookies are ready to serve. Store them in a jar to keep them fresh; they’ll stay crispy and delicious for up to a month. Be sure to check the doneness of the cookies for the best results. These cookies have a truly unique character—the combination of cornflake crumbs, palm sugar, and cheese makes them even more appealing. Plus, the melted chocolate as the finishing touch makes them even more delicious. I’m so happy to be able to make these amazing cookies at home. Not only are they appealing, but they’re also rarely made in my area, so this marks the first time we’ve had such a unique snack at home.

The taste is sweet, but just the right amount of sweetness, and the crunchy texture of the cornflakes makes everything perfectly balanced on my palate. I’m thrilled to be able to prepare a treat like this at home. My family is sure to love it.
