Birthday Cake for My Little Niece

Hi, foodies! Birthday celebrations are always the most anticipated moments for many people.



older sister’s little daughter is no exception—she absolutely loves birthday parties. In fact, she celebrates her birthday almost every month. On March 4th, she celebrated her 3rd birthday. However, we only got around to celebrating it now because her mother had surgery a while back and hasn’t fully recovered yet. So, when we gathered for iftar at my house yesterday, my sister asked me to make a simple birthday cake. At first, I refused because I’m not very skilled at decorating cakes or making brownies. Especially since this time, my sister asked me to make super-delicious baked brownies.

But out of curiosity and also because I felt bad—since my niece really wanted a little surprise— I agreed and decided to give it a try this time. Usually, for birthday cakes, I make steamed brownies, like in my previous post for my husband’s birthday celebration. This time, it’s different—the ingredient composition is different, and it’s baked. Of course, the final result will greatly affect this cake.

Ingredients

5 eggs
200 grams all-purpose flour
120 grams cocoa powder
2 tablespoons powdered milk
160 grams granulated sugar
70 ml vegetable oil
50 grams butter
2 tablespoons sweetened condensed milk
1 teaspoon baking powder




Making Instructions


Add 4 eggs to a bowl, then add the granulated sugar and baking powder, and mix.

Mix until the mixture is fluffy and leaves white trails.

Then sift in the cocoa powder and flour a little at a time while mixing.

Next, add the sweetened condensed milk, vegetable oil, and melted butter.

Since my baking pan wasn’t very deep, I divided the batter into two batches to bake in two separate batches. Bake at 150 degrees Celsius using top and bottom heat.

Do the same with the second pan; the result is beautiful, with the brownies baking evenly. Once cooled, I immediately spread blueberry jam on the middle layer and then stacked the two brownies together.

I frosted them with buttercream, but since I didn’t have enough buttercream, the outer layers weren’t fully covered. I melted chocolate on top and sprinkled it with grated chocolate bar. Finally, I decorated it with a message for my niece.

Look at this—it’s so beautiful! Even though the chocolate layer doesn’t look perfectly neat, the overall presentation is fantastic. I’m so happy I was able to make my niece’s favorite chocolate-themed cake with such simple decorations.

The celebration went smoothly; the cake slices looked gorgeous, and the chocolate layer added a beautiful touch—it cut so cleanly. The brownies have a very dense texture but aren’t hard—they’re incredibly soft. The chocolate layer is crispy when taken out of the fridge, but after sitting for a while, it doesn’t melt at all—I really love that.

And of course, my niece absolutely loved this cake. She was so happy; singing the birthday song and blowing out the candles made them all very happy.
