A Sunday at KFC

Sunday afternoons have a certain calmness that makes them feel different from the rest of the week. This past Sunday was no exception—it was cool, peaceful, and the kind of weather that made you want to take things slow. The breeze was gentle, the sky was slightly overcast, and the world outside seemed to be moving at half-speed. It was the kind of afternoon perfect for a little comfort food. So, I decided to go to kfc, one of my favorite local spots, to enjoy a plate of their crispy fried rice.

As I walked into kfc the familiar aroma of stir-fried goodness greeted me. The restaurant wasn’t too crowded, and the laid-back vibe fit perfectly with the lazy Sunday mood. I ordered a plate of fried rice—steaming, flavorful, and just greasy enough to hit the spot. Each bite was a blend of savory rice, crunchy vegetables, scrambled egg, and tender bits of chicken. It reminded me how satisfying something as simple as fried rice can be.

Sitting there and enjoying the food, I started thinking about how easy it would be to recreate this dish at home. Fried rice is one of those meals that looks fancy but is actually simple to make, especially if you have leftover rice. So here’s a quick guide on how to cook fried rice in your own kitchen.

How to Cook Fried Rice

First, you need cold, day-old rice. Fresh rice is too soft and sticky, but rice that’s been chilled overnight holds its shape and gets a perfect slightly chewy texture when stir-fried. Take about two cups of cooked rice from the fridge and break it apart so it’s not clumpy.

Next, prepare your ingredients. Dice half an onion, a carrot, and a few green onions. You can also use frozen peas, corn, or any vegetables you have on hand. For protein, chop up cooked chicken, shrimp, tofu, or crack two eggs to scramble in the pan.

In a large skillet or wok, heat two tablespoons of oil over medium-high heat. Toss in the diced onions and carrots, and sauté until slightly soft. Push them to the side and pour in the eggs, scrambling them quickly before mixing them with the veggies.

Now, add the cold rice to the pan. Stir everything together and break up any remaining clumps. Add a few tablespoons of soy sauce, a dash of sesame oil, and a pinch of pepper. Keep stirring and frying until everything is heated through and well combined. Finish it off with chopped green onions for a fresh bite.

That’s it—a delicious, homemade fried rice dish that’s quick and satisfying.

So, while my Sunday afternoon at Crunches was a lovely treat, it also inspired me to cook more often at home. Food has a way of connecting days, memories, and moods. And on a cool Sunday like this one, a warm plate of fried rice felt just right.
