Good evening lovers of good meal. I'm glad to write to you all how I prepared my local dish called "OHA(leaf) SOUP.
Here In Nigeria precisely a tribe called "IGBO", oha soup is a well known meal prepared with simple yet nutritious local ingredients.
Most people, especially people from enugu state here in Nigeria uses cocoyam or even pounded yam as their soup thickener but in this case i choose to used a seed called "ACHI" in my dialect as my soup thickener and it came out sweet and appetizing as i wanted it to be. So, let's fast-forward to the main ingredients and steps in preparing this delicious soup.
Main Ingredients:
OHA leaf- 2bunch
Uziza leaf_small quantity to taste
Achi seed_ quarter of a cup
1 sizeable stockfish
Meat 1kilo
1kilo Kpomo (cow's back)
3 seasoning cube-(maggi)
2 teaspoon of salt
7pcs of fresh Pepper
Half cup of periwinkle
Crayfish 2cups
Stock Water/2cups of water
1cup of red oil
Step1:
I separated the oha leaf from the stems and pieces it to my desired shape washed it kept it aside, washed the uziza leaf and cut it to a small size too.
Step2:
I washed the meat, stock fish and kpomo very well and I put it in a pot, seasoned it with 1 maggi and fresh pepper, i added 1cup of water and boiled it to cook very well for 10 minutes before adding a little salt 👇
Step3:
I blended the pepper along with crayfish, i also washed the periwinkles. I checked the meat i steam and it has cooked to my taste, so i added red oil to the meat stock and stirred very well before adding my soup thickener (achi), the 2 remaining seasoning cube, blended crayfish and pepper
Step4:
I added the periwinkle, salt and uziza leaf, i allowed it to steam for 2minutes before adding the OHA leaf, i stirred it very well added water to it and leave it to boil for extra 2minutes before bringing it down 👇
Finally, my delicious 😋 OHA SOUP is ready to be served 😋, it can be eaten with semovita, wheat flour, cassava flakes (garri), pounded yam or even fufu 😋, but i love to eat mine with fufu 😋😉. OMG 😱 this soup is head slapping sweet 😃
