
Good evening friends and lovers of good food. On today's menu, i prepared a delicious vegetable egg sauce , rich in protein and can be enjoyed both for a weightloss/weight gain person.
It can be served with white rice, yam or spaghetti 🍝 but i enjoyed mine with white rice which is available for me. Below are the ingredients I used in preparing it👇
3big eggs
9small fresh tomatoes
3 sizeable fresh pepper
3 red Onion
1small garlic
2 tablespoon of vegetable oil
A handful of pumpkin leaf
1 seasoning cube
1 spoon of salt



Steps in preparation:
1: I sliced the Fresh tomatoes, pepper, garlic and onions in a together and kept it aside


2: i then separate the vegetable from it's stem and washed it, after washing it 3 times, i cut it to my desired size


3:the next thing is to wash the egg shell gently to remove dirts, i now break it in a bowl, ready to be used.

- I dried the sauce pan and added the vegetable oil, then I poured in the sliced onion, pepper and tomato together and give it a good stir, i allowed it to stem for about 2minutes before adding my seasoning cube and salt and stirred it





5:i now poured in the eggs and allowed it to steam for 3 minutes before stirring gently, the last thing I added was the vegetable and yes my egg sauce is ever ready to be served 🤗🤗




Of course, it's very easy and quick to prepare, i boiled 2cups of rice to eat. I hope someone out there can try this recipe, i bet you'll surely enjoy it like i did 😊.
