Hello, my dear friends. Welcome back to my kitchen!

There are recipes that connect us to an important part of life, like this one, which took me back to my school days, when my sixth-grade teacher used to make this candy to sell, and my mom would buy both the orange and lemon varieties from her. This is the first time I’ve made it; it requires a specific technique to remove the bitterness from the fruit and patience to cook it. Although I made it with the basic ingredients, you can enhance the flavor with cloves and cinnamon for a delicious spicy touch.

Hay recetas que conectan con alguna parte importante de la vida, como ésta que me trasladó a mi época escolar, cuando mi maestra de sexto grado hacía este dulce para vender y mi mamá le compraba tanto el de naranja como el de limón. Es primera vez que la hago y la encontré en un recetario, si tiene su técnica para quitar el amargo de la fruta y dedicación para cocinarlo. Aunque lo hice con los ingredientes básicos se puede elevar su sabor con clavos de olor y canela para un rico toque especiado.

  • 8- 10 naranjas de jugo o California (pequeñas), que estén suaves al tacto y que sean amarillas porque son más dulces.
  • 1 kilo de azúcar
  • Agua suficiente para su preparación
  • 8–10 juice oranges or California oranges (small), which should be soft to the touch and yellow in color, as they are sweeter.
  • 1 kilogram of sugar
  • Enough water to prepare it

Paso 1: Lo primero es pelar las naranjas, con cuidado de no llegar a la parte blanca para luego cortarlas en mitades.

Step 1: First, peel the oranges, being careful not to cut into the white pith, and then cut them in half.

Paso 2: Se exprimen suavemente para extraer la mayor cantidad de jugo, ésto es para que no se deshagan mientras se cocinan. Luego se retiran las semillas que quedan, aunque verás que la gran mayoría salen solas al momento de apretarlas.

Step 2: Gently squeeze them to extract as much juice as possible; this prevents them from falling apart while they cook. Then remove any remaining seeds, although you’ll find that most of them come out on their own when you squeeze them.

Paso 3: Una vez exprimidas las naranjas, se pesan antes de ponerlas a cocinar. Esto permite calcular la cantidad de azúcar que usaremos después que estén blandas. En esta ocasión, el peso fue de 800 gramos.

Step 3: Once the oranges have been juiced, they are weighed before being cooked. This allows us to calculate the amount of sugar to use once they have softened. In this case, the final weight was 800 grams.

Paso 4: Se ponen a cocinar con agua que las cubra y se llevan a hervir por 5 minutos. Se desecha el líquido, se cambia por agua limpia y se vuelven a hervir. Se repite este paso tres veces (un poco tedioso pero necesario para quitar el amargo). Finalmente se ponen a cocinar por unos 40-45 minutos hasta que queden suaves, deben mantenerse enteras. Sabrás que están en su punto, si puedes picarla con una cucharilla y esta pasa sin esfuerzo.

Step 4: Place them in a pot with enough water to cover them and bring to a boil for 5 minutes. Drain the water, replace it with fresh water, and bring to a boil again. Repeat this step three times (a bit tedious but necessary to remove the bitterness). Finally, cook them for about 40–45 minutes until tender; they should remain whole. You’ll know they’re done when you can pierce them with a spoon and it goes through easily.

Paso 5: Una vez listas las naranjas, las sacamos de la olla, se remojan en agua un rato (usé agua a temperatura ambiente) y se vuelven a exprimir, cuidando de no romperlas. Esto se hace para que salga cualquier resto de jugo amargo que pueda quedar.

Step 5: Once the oranges are ready, remove them from the pot, soak them in water for a while (I used room-temperature water), and squeeze them again, being careful not to break them. This is done to remove any remaining bitter juice.

Step 6: As I mentioned in step 3, you need to keep the same ratio of oranges. In this case, for the 800 grams of oranges, we’ll use the same amount of sugar (equivalent to 3 ½ cups); the same amount of water should be measured out in cups, and both are added to a pot.

Paso 6: Como les dije en el paso 3, hay que mantener la misma proporción de las naranjas. En este caso, para los 800 gramos de naranja, utilizaremos la misma cantidad de azúcar (equivalente a 3 ½ tazas) que en tazas debe ser la misma medida de agua y se llevan a una olla.

Step 7: Start by heating the sugar with the 3 ½ cups of water in a pot. Once it comes to a boil, add the oranges and cook until a syrup forms. Do not use utensils to stir; just gently rock the pot from side to side.

Paso 7: Se comienza calentando el azúcar con las 3 ½ tazas de agua en una olla, una vez que hierva, se añade las naranjas y se cocina hasta obtener el almíbar. No se debe remover con utensilios, solo mover la olla suavemente de lado a lado.

And that’s how this delicious orange dessert turns out. You can enjoy it on its own, and it goes great with vanilla ice cream or a little creamy white cheese.

Y así queda este delicioso dulce de naranjas. Se puede disfrutar así solito, y debe quedar muy bien con helado de mantecado o un poco de queso blanco cremoso.
