Happy start to the week, filled with health, energy, wonderful ideas, and lots of enthusiasm in every activity you undertake.
My question in the title arises from times when we work with fruit and are left with residue, as is the case with coconuts and when we go through the process of obtaining coconut milk. This happened, and what do I do with it? A considerable amount after obtaining the coconut milk, which was the initial purpose of using the coconut.
In the past, I used a smaller amount to knead with the cornmeal for arepas, and it worked well, but this time I decided to research and transform the coconut pulp into delicious cookies.

Para esta receta se utilizó:
250 gramos de bagazo de coco
¼ de aceite vegetal
½ taza de harina leudante
½ taza de azúcar
1 cucharadita de polvo de hornear
3 gotitas de esencia de Panetón (Esencia la que en el momento tenga a su disposición, en este paso a paso se utilizó 3 gotitas de esencia de panetón, la que tengo en casa por ahora).
Although I researched a recipe, I consider it a trial and error process, as it's the first time I've made it, and I also used other ingredients instead of those suggested in the recipe.
For this recipe, the following was used:
250 grams of coconut pulp
¼ cup of vegetable oil
½ cup of self-rising flour
½ cup of sugar
1 teaspoon of baking powder
3 drops of Panettone essence (Use whatever essence you have on hand; in this step-by-step, I used 3 drops of panettone essence, which is what I had at home for now).

Procedemos
Instructions:
Place the coconut pulp in the bowl, add the oil and the egg, and mix everything very well to combine.

Add the self-rising flour, sugar, baking powder, and panettone essence. Mix everything together.
You can adjust the amount of flour used. The dough was refrigerated for a few minutes to make it easier to form balls. Since the mixture wasn't large enough to form balls, I used two teaspoons to portion the dough into cookie shapes.

Here, using spoons to help place the mixture onto the baking trays for baking. Once in the oven, leave for approximately 25 minutes. It's a good idea to check the oven after 20 minutes to see how it's cooking.

Once out of the oven, it's slightly crispy on both sides, but with a delicious and delicate flavor. Ideal for snacks.
