A little sugar wouldn't hurt nobody....

But too much will...

How do you actually make a proper cookie cup?

A few days ago I shared roughly how to make a cookie cup for your coffee but this time, I’ll really tell you all the ingredients that you might need to create this awesome cookie cup that could impress your guests or your loved ones. Honestly, I can see how this can be used as a baby gender reveal with the bottom of the part being coated with either blue or pink chocolate. It's fun, edible and yummy too!

Ingredients

  • 150 gr of plain flour
  • 75gr of margarine
  • 5 Tbsp of sugar
  • Oatmeal (optional)

Extra tools ( skip if you don’t have it)

  • Papercup ( simply change to ceramic mug)

Instruction

  • Mix margarine and sugar until it softens.
  • Add flour into the mixture until you get clumping consistency.
  • Make sure to smoothen the dough.
  • Pre-heat the oven to 200C
  • Take a bit of the dough to cover the base and work your way up until it has the ceramic or the paper cup shape
  • Refrigerate for 15 minutes
  • Bake in 180 C for 40 Minutes in gas oven and 25 minutes in electric oven
  • Slowly flip on the 25 minutes mark
  • Let it cool and rest for another 10 minutes.
  • Serve and enjoy!

Simple isn’t it? The rest is really up to you. You can coat this cookie cup with mint chocolate, dark chocolate or white chocolate. Then fill up with the drink of your choice from milk, coffee or even teas.

In case you didn’t know, Affogato is an Italian dessert that you can find in coffee shops. It is a mixture of ice cream and espresso. In my case, I made a twist on the classic affogato by coating the cookie cup with mint chocolate that when it is consumed, it will create a minty sensation.

Mint Affogato

Inside the cup, I was adding coffee and for my mom, I made her chocolate milk that even goes really well with the minty flavored chocolate. Then for the ice cream, I add vanilla, strawberry and one chocolate.

So, you can go crazy with the coating that’s inside of the cookie cup. While it isn’t common in most coffee shops, honestly it isn’t that difficult to make and should be served with affogato.

It doesn’t hold that much liquid so this is best for dessert coffee instead of just coffee that I made previously. While this can be made just for coffee, now, I found the perfect way to use this cup cookie dough which is for Affogato.

I swear, this tastes amazing and a sugar rush too!

There are differences when it comes to using oat vs pure flour and margarine. You’re basically adding extra crunch in your cookie when you are adding oats.

I first knew affogato more than a decade ago. It was my first cafe dessert that still holds a special place in my heart until today. Honestly, that affogato was one of the reasons I got into coffee and its world. Somehow, having to focus on just coffee for more than almost 10 years now, these days I got reconnected into this dessert world and trying to find my way to integrate my knowledge of coffee with desserts.

Sugar is addictive and probably that’s why as much as I told myself to quit baking, I keep finding myself doing it all over again, getting a little “obsessed” and according to my partner, a little bipolar mixture in my desserts.

I don’t think this recipe, especially mint affogato, really exists out there but it beats me. I’ve never really googled it, I was simply just thinking about my favorite coffee dessert and giving it a twist.

So, if you enjoy the combination of espresso and desserts, you should give this a try!

A little sugar rush never hurt anyone... until I eat five of these in one sitting 🤭 But seriously, love this idea!

I can't even finish one, it's such a sugar bomb tbh haha

I love affogato and this mint affogato looks super yummy and good looking 😍😍

😄 It's definitely yummy and minty. I also refrigerate some of it and make crumbs to add into my korean Bingsoo. It's such a versatile stuff if you can't finish it in one go 😄
