They are such a beautiful muffins! I don't know why over here we aren't inventing a good butter. Afterall, we have many cows and maybe it's just not cultural for us to use butter. Even butter that are used to baking here tastes different. It's like you have to buy the real expensive one to actually get a proper taste for it.

With thai sponge feels rubbery, honestly, I made thai steamed cake and it was so rubbery. I followed exactly the recipe and even my mom think I failed. Now I get reassurance, their cake is rubbery 😂 and maybe just the way it is. I never post it through cause it look rubbery and it was pretty weird.

I spent half the evening reading articles on rubbery sponge! The wife thinks I'm mad. You are correct, though, almost every spongy thing in Thailand is poor. I read it could also be down to the amount of proteins in the flour. I'll try again using exactly the same recipe when I'm back in the UK next month. This is becoming an obsession!
