Chicharrón is part of the Venezuelan gastronomy, and it is made with the skin of the pig. I have always liked to prepare chicharron at home, but they are always greasy, and right now I can't be consuming a lot of fat. However, today my husband stopped by on his way home from work and bought some chicharrón, but this one is like a cracker, it is super crunchy and has no fat. Since I really like to make stews, I wanted to prepare this one with cracklings. This preparation can be combined with the garnish that you like the most; many combine it even with rice; but it is a matter of taste. I show you this preparation.

El chicharrón es parte de la gastronomía Venezolana, y es realizado con la piel del cerdo o cochino. Siempre me ha gustado preparar chicharrón en casa; pero siempre estos quedan con grasa, y ahorita no puedo estar consumiendo muchas grasas. Sin embargo hoy mi esposo cuando venía de su trabajo se paró y compró chicharrón , pero este es tipo galleta, es súper crocante y no tiene grasa. Cómo me gusta mucho realizar guisos quise preparar este con los chicharrones tipo galleta. Realmente es más saludable que los he preparado y he compartido con ustedes.Esta preparación puede ser combinado con el contorno que más les guste; muchos lo combinan hasta con arroz; pero es cuestión de gustos. Te muestro esta preparación.

Ingredients

200 grams of crispy cracker-type pork cracklings
1 onion
5 chili peppers
3 cloves of garlic
1 branch of chives
1/2 paprika
Salt to taste
Oil onotado

Ingredientes
200 gramos de chicharrón de cerdo tipo galleta crocante
1 cebolla
5 ajíes
3 dientes de ajo
1 rama de cebollín
1/2 pimentón
Sal al gusto
Aceite onotado

Take the chicharrón, which because of its crunchiness, grind it quickly and put it in a frying pan with water to soften it.

Tome el chicharrón que por lo crujientes lo triture rápido y lleve a sartén con agua para suavizar.

Take the vegetables, wash very well and grate on a cheese grater on the coarse side.

Tome los vegetales, lave muy bien y ralle en rallador de queso por la parte gruesa.

Once the seasoning is ready, add the chicharrón, salt to taste and to give it color, add a little olive oil. Add a little more water and cover until the broth is consumed.

Una vez listo los aliños, incorpore a el chicharrón, coloque sal al gusto y para darle color coloque un poco de aceite onotado. Agregué un poco más de agua; y tape hasta ver qué se consumiera el caldo.

It is a healthier stew since the crackling does not contain fat; this is a preparation that I recommend to make with this type of crackling.

Es un guiso más saludable ya que por ser el chicharrón tipo galleta no contiene grasa; está es una preparación que recomiendo realizar con este tipo de chicharrón.
