The very popular chicken teryiaki is a Japanese dish where the chicken is glazed and then cooked in a teryiaki sauce which is made from soya sauce, vinegar and sugar. The ready made version is really good so I generally buy that.
I cook my rice by putting a small amount of olive oil just to coat the rice and then add a half a teaspoon of turmeric powder to colour the rice yellow and also because it adds to the health of the dish.
Brown the chicken in a heavy pan and add onion, carrots, pineapple, peppers and the teriyaki sauce.
Once the chicken is cooked and just before serving add the cashew nuts and add to the rice and decorate with some raw basil.
This has always been a successful and wonderful meal to serve to guests. So easy to prepare and can be made in advance and warmed up.
