This Saturday, I decided to cook waakye for lunch at home since I normally prepare lunch on weekends. Besides it had been a while i made some Waakye might sound new to you but it is Ghanaian rice dish made with rice and beans which is often served with stew or a spicy dark sauce called 'shito' and maybe other toppings.
Lets dive straight into the details
FOODSTUFFS
A cup of rice
Half a cup of beans
Dried sorghum leaves
I began with washing the dried leaves and put it on fire with water. The main purpose for the leaves is for the color

I left it to cook a bitfor about 5mins, whilst the water slowly turn wine. Then i washed and added the beans 🫘.

At this point i left the the beans to boil with the leaves till the beans was partially cooked, it took about 30mins, the beans are harder to cook thats why its cooked halfway vefore the rice is added.The beans turned wine colour because of the sorghum leaves. It is used as a natural food colouring.

Afterwards i took out the cooked sorghum leaves because i was okay with the colour. You can decide to cook without the leaves only you won't attain the colour of food like mine.
Next, I washed the cup of rice.You can use any rice of your choice. But most preferably white rice. Then i added to the partially cooked beans. Stirred for a uniform mixture.

I left it cook till the rice was well cooked and soft as well as the beans. This stage is is the most important stage because you have to cautious and regulate heat to avoid the rice getting burnt. It is important to know the nature and type of your rice to avoid putting too much water or less.
I added more water because the type of rice i used absorbs more water. I monitored a regulated the heat till it was cooked well

The waakye itself is ready but it is eaten with stew or 'shito' a spicy dark Ghanaian sauce and other things preferred like spag, gari(made from cassava) and some veges like cabbage, onions, carrots or green pepper depends on what you want. You can also choose to just eat with obly stew or 'shito'
I used only cabbage and onions, spag and gari and avocado
At this point i had to go pause my cooking and go run an errand.
This second part of post shows how I served it.
I chopped cabbage and 1/2 onion bulb and washed it.

Finally it was time to serve

Here my dish was fully served. This first plate i served my mum. She very much liked it 😊
It would have taken me maybe 1hour and 30mins or less to cook but i used more time because after my rice was ready i had to go pick some stuffs and come back and continue.
