Holla amigos de hive, how are you all doing today. I want to share my favorite lunch recipe with you for the #hivetopchef #contest. This is a rice recipe, but this time with chopped sausages and veggies used in the process. It's a fast lunch meal and very delicious too. I love the fact that I get to eat the sausages in between the meal, giving it a chewy texture.
INGREDIENTS
●3 cups rice
●2 carrots
●2 teaspoon salt
●1 tablespoon mix spices
●2 chili pepper
●2 eggs
●2 sausages
●2 onions
●2 seasoning cubes
●half cup vegetable oil
●1 satchet tomato paste
STEP 1
Wash rice and then soak with hot water and set aside.
Prepare onions, wash, and chop them.
STEP 2
Scrape carrots, wash and chop carrots, chili pepper, and sausages into desired shape. Set aside and proceed with cooking properly.
STEP 3
In a pot, add half a cup of vegetable oil, onions, and tomato paste. Fry for 10 minutes and add two cups of water. I also had a leftover chicken stock, which I added at this point, to make the rice more flavourful.
STEP 4
Add all spices, salt, and rice. Cook for 20 minutes and add the carrots, chili pepper, and sausages. Stir together and cook for another 10 minutes.
Now, it's ready to be served and enjoyed. I served the meal with a hard boiled egg. It was a great lunch day for me and every one of my family. They actually came demanding for more.
