Holla friends of hive, how are you all doing today in the @foodiesbeehive community. This time, I want to share with you a simple, delicious meal made with beans, yam, and prawns. So I had yam that has been in my kitchen for weeks. When I noticed it was going bad, I peeled, cut into smaller sizes, washed, and packed it in a zip lock bag. This was kept in the freezer until I was ready to use it. I discovered this method is better as it will reduce waste and also keep food items fresh for a longer time.
Ingredients
• 1.5kg frozen yams
• 500g dried prawn
• 1 cooking spoon palm oil
• 5 onions
• 10g peppers
• 1 seasoning cube
• 1.5 tablespoon salt
• 1kg black eye beans
Cooking Procedure
Step 1
Pick beans, remove dirts, wash, and parboil for 10 minutes. Rince thoroughly and put back to cook for 25 minutes or until very soft.
While beans is cooking, chop the onions and set aside.
Step 2
Add 3 quarter of the onions to the beans and 1 tablespoon of salt and allow to cook.
I used my manual grinder to grind the dried prawns and the remaining onions.
I added the frozen yams when the beans was already tender.
Step 3
I added the rest of the spices after the yam. Pepper, seasoning cubes, salt, more onions, and the prawns. It cooked for 15 more minutes and I stired to avoid burning. Taste and adjust spices at this point.
Our delicious black eye flavor prawn beans is ready. It's very easy to prepare, and I chose this particular type of beans because it cooks easily and gets very soft, which is the best way to enjoy beans - soft and delicious.
This particular beans is commonly known as iron beans. I'm not sure why it is called that, but I'm sure it's good for pairing with other food.
