Today I cooked my family's favorite menu, especially my husband who really likes this dish, red snapper head curry, easy to cook, it tastes very delicious.
In Indonesia, snapper fish head curry is usually sold in Padang restaurants and the price for 1 portion is quite expensive.
Usually curry has a red sauce made from red chilies, but this time I made one that wasn't spicy so the curry was yellow because the children all ate this fish head curry, even though it's only the head, it has quite a lot of meat and what makes it taste more delicious is the sensation of eating the spices. which seeps into the bones of the fish head is very tasty.

Material
1 kg red snapper head (1 head split into 2)
1 bunch long beans cut into pieces
12 grams of whole chilies
6 grams of crushed galangal
2 crushed lemongrass stalks
1 pc tamarind kadis (I didn't use it because I didn't have stock)
4 lime leaves
2 bay leaves
65 ml instant coconut milk
Seasoning:
1 tsp salt
1 tsp chicken stock
1/2 tsp ground pepper
1 thumb brown sugar
Ground spices :
20 grams of garlic
30 grams of red onion
6 grams of candlenuts
5 grams of turmeric
6 grams of ginger
How to make :
Wash the fish clean then set aside
Chop the spices before grinding them with a blender to make the grinding process easier
Blend the spices until smooth
Heat oil in a frying pan then saute the ground spices until fragrant.
Add kadis acid, whole chilies, lime leaves, bay leaves, crushed lemongrass and crushed galangal, stir-fry again until fragrant.
Add the seasoning then cook for a while and add water according to taste, you can use a lot of water or a little, I used approximately 700ml water.
After boiling, taste test if it suits your taste, add long beans, instant coconut milk, stir until mixed well
Add the clean, cooked red snapper head and cover with the cooking sauce until it boils and the water reduces slightly
Snapper fish head curry is ready to be served.
